Określono wpływ wysokich ciśnień na wybrane właściwości mięsa kurcząt. Surowiec stanowiły mięśnie piersiowe, które po rozdrobnieniu i próżniowym zapakowaniu poddawano działaniu wysokich ciśnień (200, 300, 400 i 500 MPa, 10 minut, 10°C). Po 24 godzinach od zastosowania HPP w mięsie oznaczano: pH, wodochłonność, wyciek termiczny, parametry barwy oraz wskaźnik TBA. Biorąc pod uwagę uzyskane wyniki badań (obniżenie wodochłonności i pogorszenie parametrów barwy), wykorzystanie HPP do przedłużania trwałości surowego mięsa drobiowego wymaga dalszych badań, w celu ograniczenia tych niekorzystnych efektów. Nie stwierdzono natomiast istotnego wpływu HPP na tempo utleniania lipidów.

The aim of the study was to investigate the influence of high pressure on the selected properties of chicken meat. Breast muscles were ground, vacuum packaged and subjected to high pressure treatment (200, 300, 400 or 500 MPa, 10 min, 10°C). Then, after 24 h of storage, pH, water holding capacity, cooking loss, colour values (L*, a*, b*) and TBA were determined. Results showed that high pressure negatively affected technological properties of chicken meat and increased its lightness. Therefore this treatment could not be recommended for preservation of that type of meat. High pressure did not influence significantly lipid oxidation in chicken breast meat.
