Zbadano wpływ gotowania nasion soczewicy (Lens culinaris) oraz zamrażania po ugotowaniu na wartość odżywczą, zawartość związków biologicznie aktywnych oraz właściwości przeciwutleniające. Materiałem doświadczalnym były handlowe nasiona soczewicy pochodzenia polskiego oraz kanadyjskiego. Badane nasiona soczewicy charakteryzowały się wysoką zawartością popiołu (3,2 i 3,4% s.m.) oraz białka (25,2 i 27,4% s.m.), które miało dość wysoką strawność (80-84%). Stwierdzono w nim ponadto wysoki udział białka rozpuszczalnego (43-44%). Zawartość fosforu fitynowego mieściła się w zakresie 94,8-103,8 mg % s.m. natomiast polifenoli - 1,2 i 1,4% s.m. Po gotowaniu zaobserwowano obniżenie ilości popiołu, białka rozpuszczalnego oraz polifenoli i dostępnych grup tiolowych. Natomiast zwiększyła się zawartość kwasu fitynowego, białka ogółem oraz jego strawność. Badania aktywności przeciwrodnikowej ekstraktów z nasion soczewicy wykazały, że ekstrakty acetonowe z obu badanych odmian posiadają aktywność na tym samym poziomie i jest ona wyższa w porównaniu z ekstraktami wodnymi. Po gotowaniu aktywność ekstraktów wodnych i acetonowych obniżyła się, natomiast po mrożeniu stwierdzono niewielki jej wzrost.

The aim of the study was the determination of the influence of cooking and freezing after cooking of lentil (Lens culinaris) on the nutritive value, contents of biologically active substances and antioxidant properties. The scientific material were commercially available lentil seed from Poland and Canada. The investigated seeds were characterized by a high ash (3.2 and 3.4% DM) and protein (25.2 and 27.4% DM) content. The protein had a good digestibility (80-84%). A high share of soluble protein in the total protein content was noted (43-44%). Phytate content was in the range of 94.8-103.8 mg% DM, while polyphenol content -1.2 and 1.4% DM. After cooking, a decrease of ash content, soluble protein, polyphenols and available thiol groups was found, while the contents of phytate, total protein and its digestibility rised. It was proved in the determinations of lentil extract antiradical properties that acetone extracts from both investigated cultivars had an activity on the same level and higher as comparing to water extracts. After cooking the activity in water and acetone extracts dropped, while after freezing its slight grow was recorded.
