New studies on the relationship between physiological phosphorus concentration and protein content were performed, involving well-characterised research material: elements of 36 carcasses of pigs differentiated in respect of gender, post-slaughter weight (PSW) and meatiness measured as the lean meat percentage (LMP), determined on the ground of dissection. The contents of total phosphorus (PC), crude protein (BC), collagen (CC) and muscular protein (BM = BC – CC) in meat were determined. It was found that determination of crude protein alone was not sufficient for prediction of natural phosphorus content in pork meat and its products. Satisfactory estimation of phosphorus content in pork meat based on crude protein and collagen content was obtained. Influence of carcass meatiness and post-slaughter weight of pigs on phosphorus content in meat was demonstrated and considered in the equation of estimating phosphorus content in meat. No effect of pig gender on phosphorus content in meat was found.
In the years 2011-2012, thirteen cultivars and breeding lines of Chinese origin adzuki bean (Phaseolus angularis W.H. White) were evaluated for their selected breeding characters and seed protein content in the climatic conditions of Central Europe. In the field experiment, the evaluation included seedlings emergence, number of pods per plant, number of seeds per pod and plant health status. In the laboratory research, the assessments included seed germination as well as seed dry matter and total protein contents. In Western Poland climatic conditions, it was possible to produce seeds of adzuki bean. However, in cold and wet years, they did not set seeds. The tested materials differed in plant emergence, earliness, number of pods per plant, number of seeds per pod and plant health status. The produced seeds had germination capacity from 0 to 54% and no symptoms of bean weevil (Acanthoscelides obtectus Say) damage. They also had from 20.01 to 31.91% of total proteins in d. m., which proved they could be a valuable source of plant protein. Amongst the evaluated materials, one breeding line (marked with the letter J) turned out to be the best, whereas the other one (marked Z1) was also interesting for further breeding work.
The aim of the present study was to verify the hypothesis that α-lactalbumin (LALBA) gene polymorphism may be a factor differentiating defence mechanisms in cattle. The association between LALBA polymorphism and the levels of blood indices characterising defence functions were examined in a group of 129 female calves and young heifers, produced by random mating of parental couples. The levels of blood diagnostic indices were determined four times: at 15 to 30 d, 3 months, 6 months, and 12 months of age. The genotypes distribution within the progeny was uneven (LALBA AA - 59.7%, LALBA AB - 35.7%, LALBA BB - 4.6%). At all times of the analysing, statistically significant differences between LALBA genotype groups were observed in the number of leukocytes (LALBA AA>LALBA BB), and the percentage of eosinophils (LALBA BB> LALBA AA). LALBA polymorphism also differentiated the percentages of lymphocytes (15 to 30 d, 3 months), neutrophils (15 to 30 d, 3 months, 12 months), basophils (6 and 12 months), and monocytes (6 months). Differences in the levels of total protein and γ-globulin were relatively low in animals aged 15 to 30 d, 3 months, and 6 months, but high in those aged 12 months (LALBA AB>LALBA AA>LALBA BB). There was a correlation between LALBA polymorphism and lysozyme activity (LALBA AA>LALBA AB> LALBA BB). Higher values of the NBT reduction tests were recorded in calves aged 15 to 30 d, as compared with older ones.
The experiment with ‘Boro F1’ red beet was aimed at determining the effect of the kind of nitrogen fertilizer (RSM, ENTEC 26) and the manner of application (broadcasting/liquid spreading, with / without foliar nutrition) on the content of protein nitrogen in roots, and ammonium and nitrate nitrogen content in leaves and roots of red beet. The kind of applied fertilizer did not have any influence on the size of examined parameters. In 2005 foliar nutrition with nitrogen caused a decline in nitrate concentrations in leaves and roots of the plants in comparison with unnourished objects; however, such correlation was not corroborated in the following years of the cultivation. Quantities of all examined parameters were diversified depending on the cultivation year.
The protein composition and technological traits were investigated in Simentaler milk with genetic variants A or B of ß-lactoglobulin (ß-LG). Data were included from 78 cows from 3 dairy farms. Genotypes of ß-LG were determined by applying horizontal starch-gel electrophoresis with addition of urea and mercaptoethanol. In addition, fat, crude protein (CP), true protein (TP), casein (CN), whey protein (WP), non-protein nitrogen (NPN), lactose and calcium (Ca) content, casein number (CNno) and rennetability of milk from Slimental breed were examinated. The method of last squares means using the general linear model (GLM) was used for statistical analysis of data. The model included heard and genotypes of ß-LG as fixed effects. The genotypes of ß-LG had no significant association with fat, CP and TP content, while CN and WP content and CNno were significantly affected by the genotypes of ß-LG. The BB genotype of ß-LG was significantly associated with higher CN content and CNno. The positive effect of the allele B of ß-LG on rennetability was found out.
Background. Arsenic is widely distributed in the environment. The main routes of absorption of inorganic arsenic compounds are the lungs and the gastrointestinal tract. Arsenates both (III) and (V) are absorbed from the gastrointestinal tract in 55-95%, while the organic arsenic compounds in 75-85%. Arsenic poisoning leads to damage the activities and morphological changes in the stomach and intestines, causing the occurrence of nausea, vomiting and diarrhoea. Arsenic compounds may also be the cause of the development of certain cancers (lung, skin and liver). The first changes caused by arsenic poisoning usually remain unnoticed. Arsenic affects haematological and both lipid and carbohydrate metabolism. It also causes changes in the organs involved in metabolism, so biochemical parameters or enzymes activity are therefore a good indicator of poisoning changes. Objective. The aim of this study was to examine the influence of protein and fat content in diet on selected biochemical blood parameters in rats. Materials and Methods. Rats (11 groups n = 88) were fed with 5 types of diet: control, low-protein, high-protein, low- fat and high-fat. Animals received water without arsenic (control group) or water with 10 or 20 μg As/mL. Results. In animals fed a low protein diets, regardless of the dose of arsenic, it was a decreasing of total cholesterol, triglycerides, and glucose in serum observed, compared to the control group. In the groups fed with low-protein diet revealed a significantly less damage in the liver as compared to the control group. In animals fed high-protein diets and with varying addition of arsenic a significant higher concentration of various biochemical parameters were found, in comparison to the respective control groups. In animals fed the high protein diet and poisoned with 20 μg As/mL of the arsenic significantly higher liver damage were found, compared to control group. Conclusions. Symptoms of arsenic hepatotoxicity measured with enzyme activity were highest in the groups of animals fed with low-protein diet. The parameters of lipid and carbohydrate metabolism depended mostly on diet than the dose of arsenic.
Introduction. Jerusalem artichoke (Helianthus tuberosus L.) is grown primarily for its edible tubers, which were first cultivated by native Americans before the arrival of the Europeans. Unlike most tubers, but in common with other members of the Asteraceae, the tubers store fructans instead of starch. Fructans are non-digestible carbohydrates considered functional food ingredients because they affect body processes in ways that result in better health and in many diseases prevention. However, the Jerusalem artichoke deserves attention not only because of the content of fructans, recent studies also indicate a high protein content, including essential amino acids. Material and methods. The aim of the work was to establish the content of protein and amino acids in Jerusalem artichoke tubers {Helianthus tuberosus L.) of red variety - Rote Zonenkugel. The content of protein was estimated by Dumas method. The amino acids composition was analysed with ion-change chromatography with postcolumn derivatisation and detection of ninhydryn reaction with automatic amino acids analyser. Results. The assessed liophylisate was characterised by high protein content (6.36%) in comparison to chicory (which is the main industrial source of fructans) and to commonly consumed potatoes. There was shown a few times higher content of essential amino acids (also of methionine) in comparison to chicory and potato. The examined essential amino acids were present in very advantagenous proportions. Conclusions. In Jerusalem artichoke tubers of Rote Zonenkugel variety of the high content of protein was established in comparison to other plant sources. The high content was found of amino acids with special stress on essential amino acids (esp. sulphur ones).
