Cross-reactions between proteins of selected legume seeds (soybean, lentil, pea, bean) were determined by immunoblotting method. Legumes other than soybeans (peas, beans, lentils) were found to contain protein fractions having the immunoreactive properties similar to soybean proteins.
The aim of the study was to determine the effect of selected microorganisms on immunoreactivity of a-lactalbumin (α-la) and ß-lactoglobulin (ß-lg) in cow and goat milks. On applying the ELISA method the strains which lowered most effectively immunoreactivity of cow milk α-la (99.95%) and ß-lg (91.26%) were Streptococcus salivarius ssp. thermophilus ТкМЗ and S. salivarius ssp. thermophilus Mk-10, respectively. α-La and ß-lg immunoreactivities in goatmilk were lower than in cow milk as these proteins accounted for 27.3% and 4.3%, respectively, of the level in cow milk. Lactobacillus delbrueckii ssp. bulgańcus reduced goat milk α-la immunoreactivity most efficiently (85-86%). Yet, in fermented goat milk ß-lg immunoreactivity increased comparing to raw goat milk. Cross-reactions between cow α-la and ß-lg and goat milk made 66% and 7.2%, respectively. Such a clear affinity of immunological activities of these proteins suggests goat milk ineffectiveness in treating cow milk allergies.
