Mushrooms are difficult raw materials for freezing. The article presents an effect of preliminary processing, freezing methods and time of storage on the quality of frozen, edible mushrooms. Among others the following treatments were considered: cleaning, sorting, washing, soaking, vacuum moistening and blanching. It has been found that final quality of frozen mushrooms depends mainly on the applied preliminary processing as well as frozen storage period. Preliminary processing should have been adjusted to the species of processed mushrooms.
