The antibacterial activity of synthetic aliphatic and aromatic monoacylglycerols (MAGs) was studied against two human pathogens: Staphylococcus aureus and Esherichia coll. The active compounds inhibited selectively S. aureus. The most active compounds amongst them were those with medium size aliphatic chain and aromatic MAGs with electron withdrawing substituents at the aryl ring. The introduction of one or two-carbon spacer between the aryl ring and the carboxylic function did not influence antibacterial effectiveness.

Modified acylglycerol emulsifiers with programmed values of hydrophilic- -liphophilic balance were obtained by esterification of glycerol with fatty acids in the presence of fatty acid soaps synthesised in situ. The kinetic studies proved that esterification of glycerol with fatty acids by the proposed method is a first order consecutive reaction with monoacylglycerol as a stable intermediate product. Knowing the reaction rate constants, the maximum concentration of monoacylglycerols may be calculated. The modification of hydrophilic-liphophilic balance of the emulsifier, thus its surface activity was obtained by programming sodium or potassium soap contents and hydrocarbon chain length. The product of the reaction may be directly used as emulsifier.
