Na świecie produkuje się piwa przy użyciu słodów uzyskiwanych z każdego niemal zboża. Z uwagi na niską aktywność amylolityczną słodu owsianego jako surowca browarniczego, bardzo ważne jest uzyskanie brzeczki o składzie odpowiednim do produkcji piwa i/lub innych napojów fermentowanych. Zacieranie takiego słodu wymaga optymalizacji procesu i często wiąże się z koniecznością stosowania enzymów spożywczych. Celem pracy była ocena parametrów technologicznych brzeczki laboratoryjnej ze słodu owsianego zacieranego z dodatkiem komercyjnych preparatów enzymatycznych. Materiał badawczy stanowił wyprodukowany w skali mikrotechnicznej słód owsiany z ziarna oplewionej odmiany Bingo. Słód zacierano metodą infuzyjną bez dodatku i z dodatkiem komercyjnych enzymów spożywczych, stosowanych pojedynczo lub w połączeniu. Brzeczki laboratoryjne otrzymane według sześciu wariantów zacierania oceniono zgodnie z metodami obowiązującymi w branży browarniczej. Na podstawie przeprowadzonych badań wykazano zasadność stosowania preparatów enzymatycznych pochodzenia mikrobiologicznego do zacierania słodu owsianego w celu poprawy parametrów technologicznych brzeczki. Dodanie do zacieru proteazy, oddzielnie i łącznie z enzymami amylolitycznymi i cytolitycznymi, skutkowało zwiększeniem ilości azotu rozpuszczalnego i aminowego w brzeczce. Wymiernym efektem zacierania słodu z udziałem enzymów o aktywności alfa-amylazy i glukoamylazy, w porównaniu z próbką kontrolną, był wzrost zawartości ekstraktu brzeczki i cukrów fermentujących, głównie glukozy.
