Development of new technologies is response of food industrial production trends and consumer demands, which required safety, fresh, tasty and convenient food products. Intelligent packaging allows monitoring food quality. There is a number of types of smart packages as the time and temperature indicators, oxygen and carbon dioxide indicators, leaks indicators, freshness, biosensors, and the RFID tags. Indicators through specific changes, mainly base on color and microbial changes, indicate a change in the composition of the atmosphere inside the package, or changes in the surface of the product.
