Celem badań było zaprojektowanie fermentowanego przecieru z dyni, jako półproduktu do wytwarzania sorbetów, z udziałem bakterii probiotycznych. Określono, że optymalne warunki fermentacji przecieru z dyni, szczepem bakterii Lactobacillus casei KN 291 to: temperatura 32 °C, czas 26 h oraz 8 % dodatek sacharozy. Zastosowane warunki fermentacji pozwoliły na otrzymanie przecieru z dyni o najwyższym stopniu pożądalności sensorycznej. W czasie procesu fermentacji następował wzrost liczby bakterii, w zależności od rodzaju przecieru, do wartości 9,55 - 9,90 jtk/g. Wyższą liczbę bakterii Lactobacillus casei KN 291 odnotowano w przecierach z inuliną, co może świadczyć o korzystnym wpływie dodatku prebiotyku na wzrost bakterii.
There is presented the information about history of the plant and production in ZPOW Hortex in Płońsk (actually member of Hortex Holding SA). There are described the works related to implementation of system HACCP (in the framework of PHARE project No PL 9607-01-12) on the lines of production of aseptic packed vegetable pastes and juices and nectars. Authoress presented the works from scope of "administration by quality" in former ZPOW Hortex Co. Ltd in Płońsk. She presented the implementation of HACCP system in present ZPOW Hortex in Płońsk. Authoress described the profits and experiences gained because of implementation of this system.
There was examined the influence of citric acid (in concentrations of 0.5 and 1%) and ascorbic acid (in concentrations of 0.025 and 0.05%) on changes in colour of sterilized (118 and 121ºC) vegetable pulps. Obtained results of colour objective estimation (verified statistically) displayed that the addition of citric and ascorbic acids caused significant changes in colour parameters L*, a*, b*. The increase of antioxidants concentrations higher redness of colour in products and caused stabilization of carotenoid pigments. However, citric acid showed stronger influence on durability of pulps colour than ascorbic acid.
