The aim of study was to assess the breaking stress and the accompanying relative deformations of potato tubers during harvest and long-term storage. The research showed that the storage duration, weather conditions during vegetation and harvest, potato cultivar, size fractions of tubers and the fertilizers used significantly afected the properties under study. The research indicated that at resting the tubers are least resistant to external stress. They show greater mechanical resistance immediately after harvest and towards the end of storage period. The relative deformations of tubers caused by external stress increased systematically during the storage period.
