Przeprowadzono badania wpływu żywienia niedoborowego w białko i dodatku witaminy C na zawartość wapnia, magnezu, żelaza, cynku, manganu i miedzi w wątrobach szczurów. Zwierzęta przez 90 dni żywione były ad libitum dietami półsyntetycznymi o wartości energetycznej 1,47 kj/100 g (350 kcal/100 g). W diecie kontrolnej 20% energii pochodziło z białka (Gp20), w pozostałych dietach ograniczono białko do 9% (Gp9) i 4,5% (Gp4) energii brutto w diecie. Część szczurów otrzymywało powyższe diety z dodatkiem witaminy C. Diety te zawierały 375 mg tej witaminy/kg diety, co stanowiło 15-o krotność poziomu w dietach bez dodatku witaminy C. Obserwowano, że ograniczenie spożycia białka spowodowało u szczurów wzrost stężenia badanych pierwiastków w wątrobie. Istotnie wyższe stężenia stwierdzono u szczurów karmionych dietą Gp4 niż pozostałymi dietami (Gp20 i Gp9) w przypadku: Mg (501,9 ±16,8, a 295,0 ±14,1 i 316,7 ±16,6 mg/kg), Mn (3,72 ±0,16, a 3,07 ±0,13 i 2,83 ±0,15 mg/kg) oraz Cu (6,08 ±0,29, a 4,96 ±0,25 i 3,23 ±0,28 mg/kg). Stężenie Cu u zwierząt karmionych dietą Gp9 było istotnie niższe niż w pozostałych grupach. Zwierzęta otrzymujące diety niedoborowe w białko (Gp9 i Gp4) miały wyższe stężenia Fe w wątrobie (P ≤ 0,05), niż zwierzęta otrzymujące dietę Gp20 (583,4 ±31,7 i 507,5 ±32,1, a 318,6 ±26,8 mg/kg). W przypadku Ca i Zn najniższe stężenia stwierdzono u zwierząt karmionych dietą Gp9 (42,35 ±4,12 i 45,09 ±2,10 mg/kg), ale istotne były tylko różnice ze szczurami karmionymi dietą Gp4 (59,08 ±4,06 i 53,24 ±2,13 mg/kg). Dodatek witaminy C istotnie obniżył stężenie Mg w wątrobie z 390,0 ±12,4 (n=86) do 352,4 ±13,6 mg/kg (n=60).
