The aim of this study was to estimate the content of betalain pigments, nitrate (III) and (V) and betaine of beetroot, depending on the cultivars. The evaluation was of red beet roots following cultivars: Nochowski, Opolski, Jawor, Rywal, Czerwona Kula, Egipski, Turkus, Nelson. It was found, that betalain, nitrate (V) and betaine contents of the juice significantly depends on cultivars of beetroot. The lowest betalain contents was noted for the cultivar of Egipski, and the highesl for the Nochowski. Nitrate (V) contents were similar in all tested varieties. Large differences were found in betaine contents between cultivars. The juice of different varieties showed a large variation in the characleristics of flavor.
