The aim of the study was to examine the microbiological quality of minimally processed vegetables and its changes during storage. 5 blends of different types of lettuces were washed and ready for consumption. Immediately after the purchase, the total number of microorganisms ranged from 5,6 to 6,8 log cfu/g; yeast and mould number 5,48-6,59 log cfu/g; number of lactic acid bacteria 0,67 to 2,35 log cfu/g; number of Enterobacteriaceae 4,67-5,76 log cfu/g. On the last day of shelf life, the number of microorganisms in most trials increased about 1 log cfu/g. The obtained results suggest the need to pay more attention to maintaining high quality criteria of the raw material and product in the food chain
