This paper presents the results of the study on the changes in apparent dynamic viscosity of the tomato pulp, obtained from the fruit of various tomato varieties selected for cultivation according to their suitability for two harvest methods: mechanical and manual depending on shear rates and temperatures. Rheological properties of tomato pulp at a shear rate within the range of 100< γ ≤ 1000 can be described by the Ostwald de Wael modulus. Linear function describes the relationship K=f(T) for the temperature range of 333≤T≤363 K.
