In 00-rapeseed oil partially hydrogenated with the Cu/Cr catalyst fatty acid composition, the content of trans isomers and solid fat, characteristic oil values and oxidative stability were determined. The hydrogénation was carried out to the complete reduction of all the trienes which resulted in clear product at room temperature and free from the solid fat at the temperature above 15°C. Practically copper-free product yielded due to the treatment of the reaction mixture with a bleaching earth followed by the filtration and chelating with citric acid. Oxidative stability of the hydrogenated product was higher by about 50% comparing to that of the starting oil.
