W artykule przedstawiono definicje produktów winiarskich, w tym produktów podstawowych, pośrednich oraz wyrobów gotowych według regulaminu WE w 1987 r. Podano też niezbędne cechy analityczne win, wykaz dozwolonych technologii i zabiegów stosowanych w winiarstwie, niezbędne dane na etykiecie wg przepisów EWG z 1979 r. oraz przykłady klasyfikacji win w kilku krajach europejskich.
Większość warzyw charakteryzuje się niską zawartością kwasów. W związku z tym produkowane z nich soki muszą być zakwaszane do poziomu umożliwiającego ich pasteryzację, a także poprawiającego walory smakowe. Zakwaszanie soków osiąga się różnymi metodami. W artykule przedstawiono badania dotyczące otrzymywania fermentowanych soków warzywnych metodą kierowanej fermentacji mlekowej.
The experiment was carried out on 5 horses of Konik Polski breed staked on a meadow for 16 h a day the period from 9th - 16th June 1985 in Raków near Wrocław. The grazing area was 133 m² per horse. Prior to and following grazing, fodder samples were collected from each site to determine the amount of forage consumed daily and its nutritive value. In the last 6 days, feces from the horses examined were sampled and analysed. Digestibility coefficient of green forage was determined by tracer mothod applying insoluble crude ash as an indicator. The horses worked every day for 1-1,5 h riding with a rider or harnessed. Analysing the feed left, it can be said that the horses consumed more plants richer in protein, fibre, calcium and phosphorus whereas the ratio of the consumed fodder to the fodder left on the pasture was on average 1,53 : 1. Digestibility indices for crude protein, crude fibre and nitrogenfree extracts exoeeded 50%. The amount of green fodder consumed by the horses on green pasture for 16 h daily satisfied their requirements in 104%.
The postsegregational killing system of pSM19035 plasmid consists of the proteins Zeta and Epsilon, a toxin and an antidote, respectively. Zeta mutants were isolated with the use of Bacillus subtilis strain with the zeta gene under control of an inducible promoter integrated into the chromosome. Results of mutant analysis point to the amino terminal part of the Zeta protein as being responsible for the toxicity.
