The effect of light, pH and strength of vodkas on strawberry dyes stability was tested in this paper. Two genotypes of strawberries and five methods of pigment extraction were also investigated. Samples of vodka in colourless glass bottles of 0,1 L capacity were illuminated at illumination level of 6 klx during 22 days. The light decolouring effect was controlled by colorimetric method - extinction measurement at 370 and 510 nm wave length. It was stated, that following parameters effected the stability of strawberries dyes in experimental conditions: the genotype of strawberries, pH of vodka and the method of pigment extraction. The strength of vodka had no effect on dye stability
