Ultradźwięki to nowa metoda znajdująca zastosowanie w przemyśle spożywczym m.in. do przyspieszania jednostkowych operacji, takich jak: suszenie, ekstrakcja i zamrażanie. Sonikacja, pomimo małej inwazyjności, wpływa jednak na przemiany fizyczne, chemiczne i biochemiczne, zachodzące w surowcach. Barwa jest bardzo istotnym, z punktu widzenia konsumenta i producenta, wyróżnikiem jakości, opisującym produkty spożywcze. W badaniach określano wpływ 30-sto minutowej obróbki ultradźwiękami o częstotliwości 21 kHz na zmiany parametrów barwy soków marchwiowych o ekstrakcie 9, 12 i 21°Brix, pochodzących od dwóch producentów. Barwę mierzono w systemie CIE L*a*b*, określając bezwzględną różnicę barwy, zmiany nasycenia i tonu barwy. Nie zaobserwowano jednoznacznego wpływu zawartości ekstraktu na zmiany barwy soków poddanych działaniu ultradźwięków. Stwierdzono, iż sok producenta A o ekstrakcie 21°Brix oraz sok producenta B o ekstrakcie 12°Brix cechowały się największą stabilnością na działanie ultradźwięków. Zmiany barwy soków po zastosowaniu ultradźwięków nie były wykrywalne przez ludzkie oko. Nie zaobserwowano także istotnych statystycznie zmian w różnicy nasycenia i tonu barwy pomiędzy sokami przed i po działaniu fali dźwiękowej.
Reptiles are becoming increasingly popular animals in amateur husbandry in Poland and worldwide. The world literature, however, does not provide data on the actual causes of radiological and ultrasound consultations in certain groups of animals, including reptiles. The aim of the study was the analysis of causes and results of diagnostic imaging examinations. The study was based on the data of 75 lizards which were patients of the university diagnostic imaging service in the years 2006-2014. The most common clinical signs in those animals were visible body deformations (33.33%), loss of body weight (30.67%) and loss of appetite (26.67%). In cases in which a preliminary diagnosis had been made, the largest proportion of animals were referred with suspected post-traumatic changes (12%), dystocia (10.67%) and ileus (9.33%). In diagnostic imaging tests, musculoskeletal (29.33%) and coelomic abnormalities (40.33%) were most commonly confirmed. Coelomic changes affected mainly the liver, reproductive system and gastrointestinal tract. For the musculoskeletal system, the most frequently identified causes were the presence of post-traumatic changes, malformations of the vertebral column, as well as metabolic bone disease. Cardiorespiratory and urinary problems were observed only sporadically. In twenty-two animals (29.33%), radiographic and ultrasound examinations failed to establish a diagnosis. The results of this study provide valuable data on the cross-section of the most common problems leading to diagnostic imaging evaluation in lizards. This research demonstrates that, despite the growing popularity of exotic animals, most of the problems diagnosed in such animals still arise from inappropriate breeding and housing conditions. In most cases, diagnostic imaging provides valuable information, making it possible to implement further steps.
The enlargement of the thyroid is, in general, benign in origin and due to nodular goitre. Follicular cellular proliferation of thyroid nodules has been increasingly observed recently. With fine needle aspiration biopsy (FNAB) this is classified as a follicular tumour. These lesions present various patterns of vascularisation in ultrasound examination. The aim of the study was to establish the relation between follicular nodule vascularisation and the proliferative activity of various types of follicular cell. According to the manner of proliferation, patients were divided into groups as follows: (I) patients with hyperplastic nodules (46 cases), (II) patients with follicular adenoma (42 cases), and (III) patients with follicular cancer (9 cases). In each case B-mode sonography, Power Doppler, sonographically guided FNAB (S-FNAB), morphological examination and morphometry were performed. The proliferative activity was detected with immunohistochemical methods (PCNA, Ki 67 and MPM2) to determine the so-called “proliferative index”. The study revealed increased proliferative activity in tumours of malignant origin and increased vascularisation in coexistence with increased proliferation of the follicular cells. As assessed by Power Doppler, an increased flow pattern in the centre of the nodules correlates with increased proliferative activity. The results suggest that Power Doppler examination could be helpful in selecting nodules for FNAB, especially in multinodular goitre.
Ultrasonic is a rapidly growing field of research, which is finding increasing use in the food industry for both the analysis and modification of food products. The sound ranges employed can be divided into high frequency, low energy diagnostic ultra- sound and low frequency, high energy power ultrasound. The former is usually used as a non-destructive analytical technique for quality assurance and process control with particular reference to physicochemical properties such as composition, structure and physical state of foods. Nowadays, power ultrasound is considered to be an emerging and promising technology for industrial food processing. The use of ultrasound in processing creates novel and interesting methodologies which are often complementary to classical techniques. Various areas have been identified with great potential for future development: crystallisation, degassing, drying, extraction, filtration, freezing, homogenisation, meat tenderization, sterilization, etc. There is a wide scope for further research into the use of ultrasound in food processing both from an industrial and academic viewpoint.
This paper presents a comparative study on the capacity of some oxidizing agents: hydrogen peroxide, atmospheric oxygen and barium peroxide to destroy cyanide ions under ultrasound irradiation. Special at­tention was directed towards hydrogen peroxide activity with or without sonication.
Flexor tendonitis and suspensory desmitis are among most prevalent musculoskeletal injuries observed in racehorses. The aim of this study was to determine which horse and race-related parameters can help to diminish the possibility of injury or – when injury has occurred – to evaluate the potential for the horse to continue a successful career after convalescence. Special attention was given to the comparison of Arabian and Thoroughbred racehorses. 187 horses with ultrasonographically visible lesions were included in the study. Following parameters were analyzed: structure (Superficial Digital Flexor Tendon [SDFT], Deep Digital Flexor Tendon [DDFT], Suspensory Ligament [SL]); percentage of cross sectional area increase; hypoechogenic lesion character; in horses with SDF tendonitis – tendonitis grade according to Genovese. This study showed that Thoroughbreds are more at risk of musculoskeletal problems than Arabian racehorses. In both breeds, the most frequent injuries concern SDFT, then SL. Over 95% of tendonitis concern forelimbs. In Thoroughbreds, the prevalence of tendonitis is higher in bigger horses, in males when compared to females and in fence / steeple racehorses when compared to flat track racehorses. The inside limb is more at risk of SDF tendonitis, when the external limb – of SL desmitis. Tendonitis severity increases with age and is greater in steeplechasers when compared to flat track racehorses. The outcome of tendonitis without hypoechogenic lesion is much better than that with hypoechogenic lesion. Evaluation of hypoechogenic lesion length is an easy and accurate prognosis tool, as the chances of returning to racing drop dramatically with lesions longer than 12 cm.
Natural phenolic compounds are recognized as bioactive ingredients in food but can also have a role as effective alternatives to synthetic antioxidants in stability improvement of foods prone to oxidation, such as edible oils. This study aimed at the preparation and HPLC-DAD characterization of phenolic extracts from Vaccinium corymbosum L. (raw, pasteurized, freeze-dried and treated with high-intensity ultrasound), and at testing their antioxidant potential in the prevention of olive oil oxidation in the native state and encapsulated into microemulsions and liposomes systems. Water-in-oil structured microemulsions used in this study were prepared using mechanical, ultrasonic, and high pressure homogenization. Liposomes with the average size of 589.1±2.9 nm were produced with the proliposome method using commercially available phosphatidylcholine – Phospolipon 90G. The obtained results showed significant prolongation of the oxidative stability of extra virgin olive oil enriched with encapsulated blueberry phenolic extracts than with native phenolic extracts, regardless of the method used for blueberry processing. Phenolic extracts encapsulated in microemulsions had a stronger effect on the prolongation of olive oil oxidative stability in comparison with the extracts encapsulated in liposomes. The average prolongation rate of oxidative stability was 45.65% by phenolic extracts encapsulated in microemulsions prepared by mechanical homogenization (p=0.012), and 58.72% by microemulsions prepared by ultrasound homogenization (p=0.011). Phenolic extracts encapsulated in microemulsions prepared by high pressure homogenization had no effect on oil oxidative stability prolongation.
Effects of ultrasound, high pressure argon, and treatments comprising their combinations on physicochemical and microbiological characteristics of white mushrooms were studied during 9 days of storage at 4°C. High pressure argon treatments were relatively effective in retaining firmness and were found to maintain the cell integrity. White mushrooms firmness after 9 days of storage was increased from 2.79 N for untreated mushrooms up to 3.01, 3.24, 3.58 N for ultrasound, treatments comprising ultrasound and high pressure argon, high pressure argon, respectively. Similarly, the loss of water, ascorbic acid and total soluble solid in fresh mushroom was also greatly reduced by the high pressure argon treatment. The ultrasound treatment followed by treatments comprising ultrasound and high pressure argon and high pressure argon, respectively exhibited a pronounced effect on retarding browning and in delaying mesophilic and psychrotrophic bacteria, yeasts and moulds growth in white mushroom, compared to the control during 9 days of cold storage. Treatments comprising ultrasound and high pressure argon treatment delayed pseudomonas growth, implying that it could extend shelf life of white mushrooms to 9 days at 4°C.
