Triticale starches were y-radiated at the doses from 0.1 to 5.0 kGy to study, comparatively to wheat starch, the effects on reducing value, water solubility, water binding capacity, and rétrogradation. Triticale starches were found to be more resistant to y-radiation than wheat starch. The doses ranging from 0.1 to 2.0 kGy had a little effect on the reducing value of triticale starches with the dose of 5 kGy resulting in a more pronounced effect. Water binding capacity and water solubility increased and the paste viscosity decreased upon y-radiation of triticale starches. The dose of 2 kGy decreased the rétrogradation of Lasco triticale starch, whereas it increased the rétrogradation of Grana wheat starch.
W pracy zastosowano metodę frakcjonowania według Czuchajowskiej i Pomeranza [1993] w celu uzyskania z mąki pszenżytniej następujących frakcji: glutenu, substancji rozpuszczalnych w wodzie, skrobi szlamowej, nierozpuszczalnego włókna oraz czystej skrobi. Stosując tę metodę uzyskano z mąk pszenżytnich mniej glutenu mokrego oraz czystej skrobi, natomiast więcej substancji rozpuszczalnych, skrobi szlamowej i nierozpuszczalnego włókna w porównaniu z ilością tych frakcji otrzymanych z mąki z pszenicy ‘Emika’. Metodą frakcjonowania uzyskano mniejszą ilość glutenu zarówno z mąki pszennej, jak i pszenżytniej z odmian ‘Presto’ i ‘Vero’ w porównaniu z oznaczoną ilością tej frakcji klasyczną metodą za pomocą aparatu Glutomatic.
The starches of potato, wheat, rye, and triticale were phosphorylated with sodium trimetaphosphate (STMP). The starch phosphates obtained had more phosphorus and less amylose, and their swelling capacity, water solubility, and viscosity were higher, and the pasting temperature was lower compared to native starches or the respective blanks prepared with the omission of the STMP treatment.
