4 Austrian varieties of rye (‘Walstaudenroggen’, ‘Echo’, ‘Schlager’ and ‘Esprit’) and one Polish variety (‘Dańkowskie Złote’) were investigated. There were differences in grains composition as well as in starch properties. Among all varieties, the best one ‘Waldstaudenroggen’ was distinguished due to a high content of soluble carbohydrates, Iow level of amylose and high molecular mass of starch. Basing on those permises it was found, that the mentioned above properties, influenced high quality of rye variety. Despite growing in different climatical conditions, the Polish variety ‘Dańkowskie Złote’ did not differ in the analysed features from the Austrian ones.
The retrogradation susceptibility of starch determines consumer suitability of food products rich in this polymer. Starch isolated from flour obtained from rye variety ‘Amilo’, which displays very low amylolytic activity, contains highest amounts of amylose and exhibits strong retrogradation susceptibility. Flour from rye ‘Dankowskie Złote’ and commercial rye flour type 720, that have higher amylolytic activity in comparison to ‘Amilo’, contain starch with lower amounts of amylose and reduced retrogradation susceptibility. Wheat starch displays lower degree of retrogradation in comparison to rye, because of larger amounts of phosphorus (phospholipids).
Analizatorem tekstury TA-XT2 badano teksturę 10-procentowych żeli sporządzonych ze skrobi pszennej i żytniej wyodrębnionej z ziarna zebranego we wczesno- i późnowoskowej oraz pełnej fazie dojrzałości, oznaczając ich twardość i elastyczność. Wykazano, że żele ze skrobi pszennej wyizolowanej z ziarna pochodzącego z wczesnowoskowej fazy dojrzałości charakteryzowały się najbardziej pożądanymi cechami funkcjonalnymi: najmniejszą twardością i dużą stabilnością tej cechy niezależnie od temperatury przechowywania (8°C i 20°C) W obrębie jednej temperatury przechowywania żele te wykazały ponadto dużą stabilność elastyczności, w odróżnieniu od żeli przygotowanych ze skrobi pochodzącej z pszenicy dojrzałej.
