Consumers are increasingly more interested in the issues associated with high-quality food (organic food); consequently, the number of organic farms and commercial establishments which off er organic products with quality certificates is growing. Podkarpackie voivodeship, thanks to certain advantages, is a favorable place for the development of organic farming. For the needs of this research, a survey was conducted in spring 2015 among 137 inhabitants of Rzeszów and the surrounding areas who declared to be consumers of organic food. An analysis of the results provides the conclusion that organic products are very positively evaluated by the respondents, since in their opinion they have a great impact on their health, which is the main reason for purchasing them. Sales and consumption growth of organic foods can be achieved by intensive advertising using the latest methods and techniques, as well as by educating society. These activities should be particularly targeted at the inhabitants of mediumsized towns, and a convincing argument should be made to draw attention to the ingredients in organic food.
The aim of the article was to compare the application of marketing communication tools used by organic food producers in Slovakia and Austria. Additionally, we were interested in the opinions of producers about customers, the differences between organic markets in Slovakia and Austria, and the barriers and opportunities to improve marketing communication in the organic food market. The survey was conducted using a standardized questionnaire developed in the Slovak and German languages by the authors of the article. The study population included 172 registered entities that have acquired the status of organic food producers. The effective rate of return of the questionnaire reached 40%. Based on the findings, it can be concluded that the Slovak organic food producers should make greater use of marketing communication tools in their business and develop distribution channels, for example: selling products in vending machines, which are used for this purpose in Austria. In addition, they should engage their clients in the process of organic food production through the use of loyalty programs and PR activities to keep up long-term relationships with them, facilitate consumer access to organic food through participation in various trade fairs, exhibitions, events, festivals, organize excursions during which consumers are able to become acquainted with the history and tradition of the company and its products, and employ targeted promotional activities to educational entities such as schools, and also in business entities and training courses on the use of organic food in the cooking process.
The article presents the consumer evaluation of marketing mix on the organic food market in Poland. The analysis is based on surveys conducted among 248 consumers purchasing organic food in retail shops in the city of Poznań. The survey questionnaire consists of four groups of research questions reflecting the four marketing mix elements: product, price, place and promotion. The conducted research indicates that the place (poor distribution resulting in limited assortment) and promotion (low effectiveness of advertising campaigns generating demand) and actions are taken in order to improve them.

The changes on the organic food market

The paper presents the state of and changes to the organic food market in Poland between 2004 and 2014. The study covered production, processing, distribution chains, price levels and consu mption of organic food. The analyses were carried out based on data obtained from reports on organic farming elaborated by the AFQI, and the author’s own survey on organic and conventional food prices. It was found that the dynamically growing number of organic farms is not refl ected in high growth dynamics in the organic food supply. Processing is also a weak element of the organic food market, showing low growth dynamics. Organic food processing is characterised by a spatial mismatch: in particular regions with considerable concentrations of organic farms, there are fewer processing plants than in regions with fewer farms. This spatial mismatch between production and processing of organic food means that some producers of organic raw materials are forced to sell their products as conventional food, which results in obtaining lower prices and lower profi tability of production. The main change in organic food distribution chains is an increase in the share of specialist shops and growing availability of this kind of product in conventional stores. The study showed that average prices of organic food in Poland are high. Therefore, consumers regularly purchasing organic food make up a small share of the market.
The phenomenon of chirality, common in nature, pertains also to food components. The effect of the chiral structure of chemical compounds is the occurrence of optical isomers, i.e. enantiomers. The only source of optically active substances are living organisms, which produce most frequently mostly one of isomers. Proteins and carbohydrates are chiral: amino acids are found in proteins only in the L form, whereas carbohydrates are formed of D-saccharides. Enantiomers may exhibit diverse behaviour in reactions with biologically active compounds of living organisms. Chiral structure of proteins turned out to be significant in the perception of taste perceptions as well as the perception of aroma. The most characteristic phenomenon is chirality among odorants. Numerous compounds essential for aroma are found in nature in the form of two isomers, with considerable predominance of one of them, while the ratio of these isomers is specific and stable. Enantiomers of odorants may differ in the intensity and character of their smell. The phenomenon of chirality has been known since mid-1800; however, it then constituted a serious analytical problem. Only the development of methods facilitating the separation of optical isomers created a possibility to investigate its universality and importance in living organisms. The application of more and more advanced analytical techniques in the control of chiral nature of food ingredients may be used to detect adulterations and especially to determine authenticity of fragrances.

Trends in the organic market worldwide

The main object of the research was to identify and analyze trends which have appeared on the world organic market recently. The article contains an analysis of the worldwide organic market, containing the perspectives of both market supply and demand. The analyses are based on international statistics, mostly gathered by FiBL and IFOAM. The author emphasizes the role of countries and regions leading in the production or distribution of organic goods.
The article presents the results of an inquiry research carried out in 2011 among specialist and general retail grocery outlets offering organic food. A comparative analysis of the width and depth of organic products range was conducted and grounds for lack of the offer complexity, particularly in retail grocery outlets, were presented as well. The sources of supply in basic products groups and the distance to supplier as the factors determining the offer were discussed. The conducted research proves that the product range, especially in general retail outlets, is not suffi cient, which results from the offer of the intermediate links of the organic food distribution channels and the relatively long distance to suppliers.
The aim of the study was to present the conditions for development of food production and distribution of organic products in Podkarpackie voivodeship and to present the opinions of consumers representing various local communities from this part of the country about purchased eco-food. To achieve this objective, a survey was conducted using direct interview method. The study involved a total of 700 residents of Podkarpackie gathered through a purposive sample. The market of organic food products is a future-oriented segment of the food market. Consumers from Podkarpackie voivodeship are of the opinion that increasing the supply of eco-products on the market in this part of the country should apply especially to dairy products, fruits and vegetables, honey, herbs, meat, and bread. The development of the organic food market will be stimulated by, among other things, the increase in demand that results from raising the level of consumer awareness of quality of organic food and its impact on health.
The work’s goal was to analyse the factors influencing decision of purchase of organic food by citizens of Krosno. Objects and research methods: the research conducted in 2010-2011 was executed with the use of a standardized inquiry questionnaire on a sample of 224 randomly picked citizens of Krosno. Results: Respondents declaring the purchase of organic food, most often upon its purchasing, pay attention to price and expiry date. When purchasing organic food the least important are shop assistant’s persuasion and the sort of package. Half of the buyers notice considerable difference between organic and conventional food. Almost all the respondents were at least content with the purchased organic food. Conclusions: 1. For citizens of Krosno, the availability of organic comestible food is limited by its high price and also by the fact that they are not on offer of stores in which respondents do the shopping most often. 2. The important factors influencing the increase in purchasing organic food are said to be the consumer’s greater awareness and advertisement.
The Rural Development Programme (RDP) for 2007-2013 is the continuation of previous activities (RDP 2004-2006) the objective of which is to develop and improve the quality of life in rural areas. The aim of the article is the evaluation of performance of the Rural Development Programme for 2008-2010 performed in Bielsk County within the ecological agriculture package with respect to agri-environmental programme. The evaluation includes financial and quantitative analysis of programme performance of ecological agriculture. It presents averaged financial transfers to ecological farms of each commune of the Bielsk County. The survey covered the following rural communes of the County: Bielsk Podlański, Brańsk, Wyszki, Rudka, Boćki, Orla. These communes are of typical agricultural nature, with the large ecological potential and the possibility of obtaining the funds from the European Union. The ecological aspect was also significant due to a slight distance of the analyzed farms from the Białowieża Forest.
