In this paper were presented edible flowers as interesting raw materials with attractive chemical profile, sensory properties and high effective in the prevention of chronic non-communicable diseases. It was also showed the potential directions for using the aforementioned plants in the food and pharmaceutical industries. Finally, it was confirmed that the edible flowers can be a natural source of polyphenolic compounds and carotenoids used in functional foods and can enrich the market of plant raw materials with products that have a healthy effect on the human body. It is therefore necessary to further popularize and continue studies on edible flowers in order to discover and indicate new directions for their use.
