In a six-month-old white pig, crossbreed of Polish meat pigs of a 110 kg body weight, from a small farm, clinical signs of back muscles necrosis have appeared. The lesions developed after 3 hours since the ocurrence of such stress factors as the slaughter of one pig in close proximity to the piggery and transport of the pig into a smaller and worse lit room. After 14 days of a typical treatment including corticoids ,cardiac and analgesis drugs, clinical symptoms of the disease disappeared. The pig was slaughtered after 4 months (body weight about 200 kg). Post slaughter examinations showed a significant decrease of the longissimus dorsi muscle of the left half carcass and necrotic lesions in the anterior part of this muscle on a 20 cm length. Histopathological examinations showed in the affected part of the m. longissimus necrotic foci with disrupted and disappearing muscular fibres, together with an associated resorptive reaction (infiltration of micro- and macrophages), and an advanced development of granular tissue which after cicatrication were filled up by decrements of muscular fibres.

The purpose of the work was to establish the susceptibility of pigs to halothane on a farm situated in the Lublin region. Two hundred and thirty five pigs of Large White Polish breed and its cross-breeds were exposed to halothane anaesthesia. A positive reaction expressed by muscle contraction especially of posterior legs was found in two individuals i.e. in 0.8G per cent of animals under study. The results indicated to the usefulness of the test in practice. As the Hal gen did not penetrate completly and there appeared resistance of heterozygotic carriers to halothanc it seemed to be reasonable to includ the studies on polymorphism of proteins (Phi, Pgd, Po2) and blood groups to the breed programme. This kind of procedure should allow to diminish the number of halothane positive animals breed in Poland.

On the basis of research the authors have found that in the case of the analzyis of the meat quality in groups of animals, it is not enough to give the results of the determinations of physico-chemical properties as averages. Due to their contrasting characteristics, the PSE and DFD meat defects occurring in the same group of animals may, in the case of calculating average values, neutralize one another and, in effect, give a result as for normal, good quality meat. Therefore, when the meat quality is analysed in groups of animals, it is necessary to give the proportional contents of PSE meat, DFD meat, and normal meat.

Badano przydatność stosowanych metod do oznaczania jakości mięsa wieprzowego w przypadku, gdy w ocenianej partii występuje mięso z wadą PSE. Stwierdzono, iż podczas rozdrabniania prób mięsa PSE mogą występować ubytki wody, które nie pozostają bez wpływu na wyniki oznaczeń chemicznych i fizykochemicznych. W celu uniknięcia błędów w ocenie, proponuje się oznaczeń składu podstawowego dokonywać na mięsie (przed mieleniem) mrożonym do temp. - 1ºС, a właściwości fizykochemiczne oznaczać na mięsie całym, nie rozdrobnionym.
