Seafood consumption in Poland is regularly increasing, although it still remains at a relatively low level compared to the consumption of fi sh and their products. The aim of the study was to obtain information on the frequency of seafood consumption and purchasing preferences among consumer groups in both a large and a small urban center, taking into account not only the place of residence, but also respondents’ age and gender. The study was attended by 204 people (50 men and 154 women). A survey questionnaire verifi ed in a pilot survey was used as a research tool. The research was carried out in a small (approx. 4,000 inhabitants) and a large (approx. 400,000 inhabitants) urban center on consumers going in and out of shops. A factor that signifi cantly infl uenced all the studied characteristics and purchasing preferences was the respondents’ age. The respondents’ gender signifi cantly infl uenced the recognition of diff erent seafood types, the place of consumption and the motivation for purchase. The size of the place of residence was the least infl uential factor in the study. There is a strong need to inform Polish consumers about seafood and the possibility of its consumption.
Background. According to the European Food Safety Authority (EFSA), fish, seafood and seaweeds are foodstuffs that significantly contribute to dietary arsenic intake. With the exception of some algal species, the dominant compounds of arsenic in such food products are the less toxic organic forms. Both the Joint FAO/ WHO Expert Committee on Food Additives (JECFA) and EFSA recommend that speciation studies be performed to determine the different chemical forms in which arsenic is present in food due to the differences in their toxicity. Knowing such compositions can thus enable a complete exposure assessment to be made. Objectives. Determination of total and inorganic arsenic contents in fish, their products, seafood and seaweeds present on the Polish market. This was then followed by an exposure assessment of consumers to inorganic arsenic in these foodstuffs. Materials and Methods. Total and inorganic arsenic was determined in 55 samples of fish, their products, seafood as well as seaweeds available on the market. The analytical method was hydride generation atomic absorption spectrometry (HGAAS), after dry ashing of samples and reduction of arsenic to arsenic hydride using sodium borohydride. In order to isolate only the inorganic forms of arsenic prior to mineralisation, samples were subjected to concentrated HCl hydrolysis, followed by reduction with hydrobromic acid and hydrazine sulphate after which triple chloroform extractions and triple 1M HCl re-extractions were performed. Exposure of adults was estimated in relation to the Benchmark Dose Lower Confidence Limit (BMDL05) as set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) that resulted in a 0.5% increase in lung cancer (3.0 μg/kg body weight (b.w.) per day). Results. Mean total arsenic content from all investigated fish samples was 0.46 mg/kg (90th percentile 0.94 mg/kg), whilst the inorganic arsenic content never exceeded the detection limit of the analytical method used (0.025 mg/kg). In fish products, mean total arsenic concentration was 1.48 mg/kg (90th percentile: 2.42 mg/kg), whilst in seafood they were 0.87 mg/ kg (90th percentile: 2.23 mg/kg), for inorganic arsenic contamination at the 90th percentile was 0.043 mg/kg with most results however being less than 0.025 mg/kg. The highest inorganic arsenic levels were determined in the Hijiki algal species samples (102.7 mg/kg), whereas the other algal samples gave a mean inorganic concentration of 0.41 mg/kg (90th percentile 0.86 mg/kg). The estimated average adults exposure to inorganic arsenic in fish, seafood and seaweeds was less than 0.5% of the lowest BMDL0.5 dose. Only for the Hijiki seaweed it was at 4.9% BMDL0.5. Conclusions. Results demonstrate that dietary arsenic intake from fish, seafood and seaweed along with all their products do not constitute a significant health threat to consumers apart from the seaweed species Hizikia fusiformis in which over 40% of all the inorganic arsenic compounds were found.
This paper reports on amino acid profiles of the flesh of heterosexuals of porcellanids collected from the Atlantic Ocean at Orimedu beach in Ibeju-Lekki, Lagos, Nigeria. Results showed that high values of amino acids were observed in the heterosexual flesh of Neopetrolisthes maculatus (g 100g⁻¹ protein): 17.7 – 17.8 (Glu), 9.90 – 10.0 (Asp), 8.70 – 9.07 (Arg), 7.23 – 7.94 (Leu) and 5.81 – 6.06 (Gly). Total essential amino acid values ranged from 45.2 to 46.2 g 100⁻¹ g. Predicted protein efficiency ratio was 3.82 – 4.14, the range of essential amino acid index was 86.9 – 89.9, the biological values ranged from 83.0 to 86.3. The Lys/Trp was 3.31- 4.27. Serine was limiting amino acid (0.513 – 0.516) in the egg score comparison; under the essential amino acids scores, Lys (0.840) was limiting in female but Val (0.823) was limiting in the male; Lys (0.796 – 0.905) was limiting in both samples in the pre-school child amino acid requirements. It was observed that out of the twenty parameters determined, male flesh was more concentrated in 60% values than the female flesh and 40% better in female than male. Correlation coefficient result showed that significant differences existed in the amino acids composition at r = 0.01 of the N. maculatus samples.
The presence of common epitopes among tropomyosins of invertebrates, including arthropods, e.g. edible ones, may help to explain the molecular basis of cross-reactivity between allergens. The work presented is the fi rst survey concerning global distribution of epitopes from Pen a 1.0102 in universal proteome. In the group of known tropomyosin epitopes, the fragment with the sequence ESKIVELEEEL was found in the sequence of channel catfish (Ictalurus punctatus) tropomyosin. To date, this is the fi rst result suggesting the presence of a complete sequential epitope interacting with IgE in vertebrate tropomyosin. Another fragment with the sequence VAALNRRIQL, a major part of the epitope, was found in 11 fi sh, 8 amphibians, 3 birds, 19 mammalians and 4 human tropomyosin sequences. Identical epitopes are common in sequences of invertebrate tropomyosins, including food and non-food allergens annotated in the Allergome database. The rare pentapeptide with the DEERM sequence occurs in proteins not sharing homology with tropomyosins. Pathogenic microorganisms are the most abundant category of organisms synthesizing such proteins.
Considering high nutritive value and sensory qualities, the products manufactured of marine invertebrates are a desirable component of human diet. These products enjoy an increasing demand in Poland. However, considerable accumulation of chlorine- organic pollutants in the tissues of marine animals may pose a threat for consumers. The study included determination of the content of PCB congeners (28, 52, 101, 118, 138, 153, and 180 according to IUPAC) in tinned and pickled seafood products purchased in Szczecin’s fishshops. In all examined products the analysed congeners were found, only in “Octopus in vegetable oil” PCB 138 was not detected. The highest content, 13.8 μg-kg_l m.m. (99.237 μg-kg’1 lipids), was recorded for PCB congener 153 in “Squid in American sauce”. The lowest residue levels were found for PCB 101 (0.002 to 0.07 μg-kg'1 m.m.). The highest percentage (from among analysed congeners) in majority of examined products was found for PCB 153 (to 95% in “Octopus in vegetable oil”) and PCB 180 (to 58% in “Pickled mussels”). The lowest percentage was stated for PCB congeners 101 (to 2.2% in “Shrimps natural”) and 52 (to 9.9% in “Greenland shrimps in brine”).
The aim of the study was to apply a polymerase chain reaction (PCR) to confirm a presence of hake (genus Merluccius) in a pool of processed seafood samples. A short fragment of the cytb in the mitochondrial control region was amplified. The hake- specific PCR product, due to its limited size, was obtained in a variety of tissue samples. A different level of DNA concentration and degradation, including processed food products, was observed. A total of 64 products were tested and despite their labels, 13 of them were proved to contain no hake. Our protocol for hake identification is faster and more convenient than currently employed methods and may facilitate the identification of fish species.
This article reports the amino acid profiles of the innards of the male and female dry samples of Neopetrolisthes maculatus collected from the Atlantic Ocean at Orimedu beach in Ibeju-Lekki, Lagos, Nigeria. The analytical results showed high values of amino acids being observed in both heterosexual samples (g 100g⁻¹ protein): 8.17-8.32 (Leu), 8.35-10.3 (Asp), 17.6-18.2 (Glu) and 7.76-9.55 (Arg) with total amino acid values being greater in female innards (97.6g100g⁻¹) than the male innards (95.5g 100g⁻¹). These quality parameters were instructive of the quality of the amino acids in the innards of N. maculatus: P-PER1, (2.83-3.01), P-PER2 (2.89-2.96), EAAI (88.7-89.0), BV (85.0-85.5), Lys/Trp (L/T) (3.00-5.01), Met/Trp (M/T) (1.78-3.50) and Phe/Tyr (1.04 - 1.65). The pI values were close at 5.46-5.57. In the amino acid groups (classes), the following trend was observed: class I > IV >V > VI > II > III > VII. For the amino acid scores: serine (0.487-0.511) was limiting in both samples on the total hen’s egg scoring pattern; in provisional scoring pattern, Lys was limiting in both samples with values of 0.820-0.889 and in the pre-school amino acid requirements, Lys was also limiting at 0.778-0.843. In the statistical analyses total amino acid profiles as well as egg scores were significantly different between the two samples whereas quality scores in pre-school amino acid requirements and provisional amino acid scoring pattern were both not significantly different between the two samples all at r=₌₀.₀₁. Among the EAAs, six out of nine (66.7%) were more concentrated in the male innards and three of nine (33.3%) were more concentrated in the female. Thus the overall summary showed the male innards amino acids were of better quality than in the female as shown: male innards EEA = 46.1 g100g⁻¹ and 46.0 g100g⁻¹ in the female with corresponding TNEAA of 49.3g 100g⁻¹ and 51.6g 100g⁻¹ respectively.
Proximate composition of the three green seaweeds viz., Chaetomorpha aerea, Enteromorpha intestinalis, Enteromorpha compressa one brown seaweed Dictyota dichotoma and one red seaweed Gracilaria corticata was investigated by determination of protein, carbohydrates, lipid, moisture and ash content. In the present study, the total protein was recarded upper most in E. intestinalis and bare minimum in E. compressa. The maximum carbohydrates recorded in C. aerea and minimum in G. corticata. The lipid content was acquired upper limit in E. compressa and least in C. aerea. The ash and moisture content in following of 5 different seaweeds are as follows: 7.45mg/g, 3.91mg/g were recorded in the C. aerea, 8.52mg/g, 3.42mg/g in the E. intestinalis, 8.58mg/g, 3.75mg/g in the E. compressa, 9.47mg/g, 4.23mg/g in the D. dichotoma and 6.95mg/g, 3.98mg/g in G. corticata. The proximate composition of 5 different seaweed species exhibited high nutritional value for human consumption.
Crab meat is an excellent source of minerals, particularly calcium, iron, zinc, potassium and phosphours. The minerals in the edible parts of muscle of C.lucifera different sexes (male, female and berried female) were determined by digital flame photometer. Totally 11 minerals are reported in the present study. Seven (Sodium> Potassium >Magnesium >Calcium>Manganese> Iron >Zinc) minerals were reported in all sexes. Sodium was maximum (137.55 mg) and zinc was minimum (1.76 mg) in all sexes. Copper, mercury and cadmium were available in trace amount in all sexes. However, arsenic was in trace amount in berried females and totally absent in males and females. Among different sexes, berried females contain maximum amount of minerals (156.24mg) followed by females (121.76 mg) and males (95.5mg).

Seafood is an excellent provider of protein with high biological values. Fish, shellfish and other aquatic organisms are appropriate for food and have world-wide importance. They‟re wonderful sources of high quality proteins, superior to those in red meat and poultry foods. The human dietary amendments that characterize the “nutrition transition” include every quantitative and qualitative change in the human diets. The present study Meretrix casta meat is used for the preparation of excellent recipes like cake, soup and mint stuffed tomato with yellow clam using M. casta meat, that have the potential to be become a regular food item in the house hold diet with consumer acceptance. The differences in food habits over the length and breadth of the nation are most that available food resources are not being used properly due to the lack of information regarding their importance. The panel of judges vouched safe for taste and delicacy of the dishes in the present study. The panel detected that the dishes were a lot of as good as those created out of the much sought after seafood in taste, smell and flavor
Polymerase chain reaction - restriction fragment length polymorphism (PCR-RFLP) analysis was used to identify fish species and to perform their authentication in commercial seafood products. Universal primers were used for PCR amplification of 464-bp long fragments of the mitochondrial cytochrome b gene. The PCR products were digested with restriction enzymes AluI, HinfI, HaeIII, DdeI, NlaIII, HincII, and MboII. Sixty fish samples were obtained from the local markets in the Czech Republic. In 47 samples (78.3%), the results were in agreement with declarations of the producers and 10 samples (16.7%) contained other fish species. There were not great differences between fresh fillets (chilled, frozen etc.) and heat-processed foodstuffs (tinned, smoked, etc). The correct designation was in 72.3% and 81.6% of samples, respectively. Even if in three cases the analysis was unsuccessful the method is useful for the control of the adulteration of food with fish tissue content and in this way it contributes to better consumer awareness.
Zarysowano problem występowania pozostałości syntetycznych związków cy- noorganicznych (ZCO) w żywności, a szczególnie zwrócono uwagę na migrację i nagromadzanie butylocyn w surowcach żywnościowych pozyskiwanych ze środowiska morskiego. Przedstawiono podstawowe dane o toksyczności butylocyn oraz szacunki wielkości dziennego spożycia tych związków zawartych w rybach z rejonu Zatoki Gdańskiej w świetle dawki uznawanej za bezpieczną.
Concentrations and profiles of hexachlorocyclohexanes (HCHs), pentachlorobenzene (PCBz), hexachlorobenzene (HCBz), DDT and its metabolites (DDTs), tris(4-chlorophnyl)methane (TCPM-H), tris(4-chlorophnyl)methanol (TCPM-H), chlordane (CHLs), aldrin, dieldrin, isodrin, endrin, endosulfan 1, endosulfan 2, mirex, PCBs and PCNs were determined using isotopically labelled internal standards and HRGC/LRMS in sludge samples collected in 1999 from the sewage treatment plant in Dębogórze (city of Gdynia) and sediment samples taken in 1992 from the Vistula River and Gdańsk Depth in the Baltic Sea. DDT and its metabolites, PCBs, HCBz, dieldrin, CHLs and PCNs were quantified in one to all four samples examined, while PCBz, TCPM-H/OH, aldrin, isodrin, endrin, endosulfan 1 and 2, and mirex were not detected above the detection limit of the method. PCBs dominated among organochlorine compounds quantified in sludge samples while DDTs dominated in the sediment.
