The aim of the work was determination of the effect of the conditions of thermal processing and storage of ground pork burgers with an addition of iodized salt and soy hydrolizate on quantitative and qualitative changes in iodine and sensory parameters of the product. Conditions of thermal processing, traditional frying with fat and fat free frying with enforced circulation of hot air were taken as variable. The results indicated that heat processing of the ground meat, irrespective of the used method, lowered total and inorganic iodine content within the range of 18-30%. Application of the traditional frying caused greater losses of the total iodine by about 7%, and of the inorganic one by 5% as compared to fat free processing. During storage of the samples at 4°C greater stability of the total iodine was observed as compared to freeze storage. Addition of soy hydrolizate brought about lowering of the losses of both total and inorganic iodine during thermal processing by 8%, and during storage by about 5%. Sensory analysis did not reveal significant differences between the burgers fried in a traditional and fat free way.
In the research the effect of thermal processing in a convection oven on dishes quality was evaluated. The quantitative and qualitative changes of some nutritive values and sensory indices were estimated in comparison with conventional methods of thermal processing. In the study raw materials and dishes of vegetable (sauerkraut and potatoes) and animal origin (cooked and roasted meat, cooked and fried minced meat balls) were investigated. The content of ascorbic acid and neutral detergent fiber (NDF) were used as the nutrition value indices of investigated vegetable dishes. Thiamine and collagen changes in meat dishes and retention of iodine in the products (meat balls) with addition of iodized salt were analyzed. All prepared dishes were sensory evaluated with the triangle test.
In the work an isolate of connective tissue (collagen) was used as a carrier of potassium iodide to increase the retention of iodine introduced into dishes made from turkey meat. Two kinds of dishes, it means cooked meat balls and fried meat balls which after thermal treatment were kept under chilling and frozen conditions were took into account. The selected variants of the thermal treatment have shown, that the cooking resulted in higher losses of iodine as the frying process. After the thermal treatment, almost 40% higher content of iodine in fried meat balls in comparison to its content in cooked meat balls was found. Type of iodine carrier, that is collagen isolate or NaCl, did not influenced in essential way on the range of losses of this element during thermal treatment. However the storage of both types of dishes has shown, that collagen isolate impregnated with potassium iodide garantees about 30% greater retention of iodine in dishes than the use of iodized table salt.
