Oyster mycelium on the liquid medium

The research presents the results of oyster mycelium growth on the liquid medium. The mycelim growth: Pleurotus citrinopileatus Singer, P. djamor (Rumph.: Fr.)Boedjin, P. erynii (DC.)Gillet and P. precoce (Fr). Quél. was tested. The quality and quantity of mycelium was assumed.
Background. Macrofungal β-glucans are mainly represented by compounds with β-1,3- and β-1,6 glycosidic bonds. They have been shown to have immunomodulatory, anticancer, and antioxidant properties. Although there are many reports on the bioactivity and structure of fungal glucans, studies on the quantitative assessment of these compounds are sparse. Objective. The aim of the study was to determine total β-glucans and 1,3-1,6-β-D-glucan contents in selected species of wild-growing edible Polish mushrooms. Material and methods. Eight species of wild-growing edible mushrooms Boletus pinophilus, Hydnum repandum, Craterellus cornucopioides, Suillus variegatus, Suillus granulatus, Gyroporus cyanescens, Tricholomopsis rutilans, and Auricularia auricula-judae and one species of cultivated mushroom for comparison purposes Agaricus bisporus, were analyzed. Quantitative analysis of 1,3-1,6-β-D-glucans was done using a colorimetric method in accordance with Nitschke et al. Result. Mean total β-glucan content varied from 13.5 g/100 g dry mass in A. bisporus (portobello variety) to 40.9 g/100 g dry mass in T. rutilans. Mean 1,3-1,6-β-D-glucan content in the analyzed fruiting bodies ranged from 3.9 g/100 g dry mass in Agaricus bisporus (cremini) to 16.8 g/100 g dry mass in Auricularia auricula-judae (wood ear). The following mushrooms demonstrated the greatest percentage of 1,3-1,6-β-D-glucan contents in relation to the total β-glucan content: Gyroporus cyanescens (54%), Suillus granulatus (49.8%), Auricularia auricula-judae (47.9%), and Suillus variegatus (40.6%). Conclusions. Among the analyzed species, wild-growing mushrooms had a generally higher average 1,3-1,6-β-Dglucan content compared with cultivated mushrooms such as A. bisporus. The highest average content of these polysaccharides was observed in medicinal mushroom Auricularia auricula-judae. Comparable 1,3-1,6-β-D-glucan content, in relation to this mushroom species, was found in Gyroporus cyanescens, Suillus granulatus and Suillus variegatus, which points to the possibility of the use of these species of mushrooms as medicinal foods.
This paper presents a review of the Polish and foreign literature concerning the storage and processing of edible mushrooms. Mushrooms are difficult raw materials for the processing industry: fresh mushrooms cannot be stored for long periods; moreover, during processing they readily change colour and texture. In order to guarantee acceptable quality of canned and processed mushrooms, fresh pilei should be kept at low temperatures. Before processing they should undergo preliminary treatment using substances preventing changes in colour and texture; the storage conditions for finished products must be appropriate to the processing method applied. The most frequently used methods of processing are: drying, marinating, sterilization and freezing.

The paper presents the results of studies on the production and quality assessment of mycelia of three varieties of King Bolete: Boletus edulisvar. pinicolusVitt. Boletus edulisvar. piceicolusVasilkov and Boletus edulisvar. reticulatus (Schaeff. ex Boud.) Bat. In the biomass of mycelium for food the following physicochemical parameters were determined: contents of dry matter, soluble protein – albumins, globulins and prolamins, the rehydratation rate, sensory and microbial quality was assessed.
The aim of this work was to determine the total phenolic content (TPC) and the antioxidant activity of methanol extracts of Hericium erinaceus, Hericium americanum and Hericium coralloides, including free radical scavenging method (DPPH), ferric reducing antioxidant power (FRAP) and radical cation scavenging method (ABTS). Hericium spp exhibited moderate to high antioxidant activity. The highest TPC (3.27 ±0.01 mg GAE g–1) and antioxidant activity values (17.0 ±0.68 mmol TE g–1 in FRAP; EC 50 = 4.12 ±0.12 mg mL –1 in DPPH •; EC 50= 2.83 ± 0.10 mg mL–1in ABTS•+ ) were found for methanol extracts of H. coralloides. The TPC and antioxidant activity of H. erinaceus isolates varied from strain to strain. H. americanum possessed considerably lower total phenolic content (2.31 ±0.01 mg GAE g–1) and antioxidant activity (10.5 ±0.59 mmol TE g–1 in FRAP; EC 50 = 7.82 ±0.09 mg mL –1 in DPPH•; EC 50 = 6.36 ± 0.12 mg mL–1 in ABTS •+) than H. coralloides and H. erinaceus. A high correlation was determined between TPC and ABTS •+( r2= 0.855), DPPH•(r2= 0.969) and FRAP (r2 = 0.942). According to results obtained in the present study, Hericium spp., especially H. coralloides and some of H. erinaceus isolates, might be promising natural source of antioxidants for food and pharmaceutical industry.
An oyster mushroom (Pleurotus ostreatus (Jacq.) P. Kumm) is a cultivated species of mushrooms characterizing with unique culinary and medicinal properties. Its’ nutritional value comes from proteins, carbohydrates, fatty acids, vitamins and mineral nutrients present in their fruitbodies. Because of a high content of fiber (mainly chitin) and low content of fat, they are a valuable element of an atherosclerosis diet. The fruitbodies of oyster mushrooms are an important source of biologically active substances, specific polysaccharides and polyphenols, which influence a human immune system, so that it fights against cancer cells. ß-D-glucans have an advantageous effect on digestive system, lower blood cholesterol and triglycerides level, decrease the risk of ischaemic heart disease. Active substances present in the mushrooms have antioxidant, antibacterial, antiviral, antidiabetic and anti-inflammatory properties. Numerous scientific studies prove high efficiency of the therapy with the use of preparations and extracts from Pleurotus ostreatus mycelia, both in prophylaxis and cure of civilization diseases, atherosclerosis and cancer.
Zbadano zawartość rtęci ogółem w kapeluszach i trzonach grzybów jadalnych, takich jak: borowik szlachetny, podgrzybek brunatny, maślak zwyczajny, maślak pstry, maślak sitarz, gąska zielonka, gąska niekształtna (siwa), zasłonak kleisty, gąsówka mglista i gołąbek jadalny, zebranych na terenie Wdzydzkiego Parku Krajobrazowego w latach 1995-1996. Przedstawiono dostępne z piśmiennictwa dane o stopniu skażenia rtęcią grzybów z rodzaju borowik Boletus i podgrzybek Xerocomus.
A heteropolysaccharide, named L2, from Lentinula edodes has been proved to possess immunostimulating and anti-ageing activities in previous studies, but its acting mechanism was not completely understood. In this study, 1 H NMR spectroscopy approach was employed to investigate the metabolic profi les of the urine from adult mice after L2 intervention. Using principal component analysis (PCA) and partial least squares-discriminate analysis (PLS-DA), 22 potential biomarkers were found to be mainly involved in some metabolic pathways: amino acid metabolism, energy metabolism, lipid metabolism, tricarboxylic acid (TCA) cycle, urea cycle and gut microbiota metabolism. Among them, the signifi cantly altered metabolites include: elevated glutamate (75%) and creatine (64%); decreased proline (65%), betaine (58%), fucose (63%) and dimethylamine (59%). In conclusion, the present data is helpful to understand the mechanisms related to previously confi rmed immunomodulation and anti-aging effects of L2, and provide valuable information for mining new functions of L2.
Effects of ultrasound, high pressure argon, and treatments comprising their combinations on physicochemical and microbiological characteristics of white mushrooms were studied during 9 days of storage at 4°C. High pressure argon treatments were relatively effective in retaining firmness and were found to maintain the cell integrity. White mushrooms firmness after 9 days of storage was increased from 2.79 N for untreated mushrooms up to 3.01, 3.24, 3.58 N for ultrasound, treatments comprising ultrasound and high pressure argon, high pressure argon, respectively. Similarly, the loss of water, ascorbic acid and total soluble solid in fresh mushroom was also greatly reduced by the high pressure argon treatment. The ultrasound treatment followed by treatments comprising ultrasound and high pressure argon and high pressure argon, respectively exhibited a pronounced effect on retarding browning and in delaying mesophilic and psychrotrophic bacteria, yeasts and moulds growth in white mushroom, compared to the control during 9 days of cold storage. Treatments comprising ultrasound and high pressure argon treatment delayed pseudomonas growth, implying that it could extend shelf life of white mushrooms to 9 days at 4°C.
An overview of Polish and foreign literature concerning the chemical composition of edible mushrooms both cultivated and harvested in natural sites in Poland and abroad is presented. 100 g of fresh mushrooms contains 5.3-14.8 g dry matter, 1.5-6.7 g of carbohydrates, 1.5-3.0 g of protein and 0.3-0.4 g of fat. Mushrooms tire a high valued source of mineral constituents, particularly potassium, phosphorus and magnesium and of vitamins of the B group, chiefly vitamins B2 and B3 and also vitamin D. The aroma of the discussed raw materials is based on about 150 aromatic compounds. The mushrooms can be a source of heavy metals and radioactive substances. They are also characterized by the occurrence of numerous enzymes.
Metodą zimnych par bezpłomieniowej absorpcyjnej spektroskopii atomowej (CV-AAS) oznaczono stężenie rtęci w kapeluszach i trzonach grzybów z terenu Trójmiejskiego Parku Krajobrazowego. Próbki do badań zebrano w latach 1995-1996. Grzyby roztwarzano w stężonym roztworze kwasu azotowego (65%) w naczyniach teflonowych w kuchence mikrofalowej. Zbadano osiem gatunków grzybów jadalnych (podgrzybka brunatnego, podgrzybka zajączka, podgrzybka złotawego, borowika szlachetnego, kotlarza babkę, pieczarkę polową, czubajkę kanię i czasznicę workowatą). Wykazane wartości stężeń rtęci ogółem w zbadanych gatunkach grzybów są zaskakująco duże.
