The physico-chemical and functional properties of casemates produced by spray-drying were analysed. During the production of sodium caseinate (SC), but not of calcium caseinate (CC), the protein degradation occurred. Compared with SC, CS had ten times higher content of calcium, higher buffer capacity, better emulsifying properties, and high stability of o/w emulsion. Compared with CC, SC had higher water solubility, higher water and oil adsorption abilities, and higher viscosity of 10% aqueous solution.
