An experiment was carried out in 2003-2005 in Parczew on the soil of good rye complex following the randomized split-plot design in three replications. The experiment factors included pre-planting treatments (ultrasonic treated and control object) and ten potato cultivars. Full manuring and uniform mineral fertilization were applied in identical rates: 80 kg N, 35 kg P, 100 kg K and 25 t·ha s¹ farmyard manure. The samples for qualitative examinations (10 potato tubers of average size) from three field replications for each plot were taken in standard may. The estimation of flesh darkening in fresh and cooked tubers was evaluated by surveying cross-section colour parameters of potato tubers in the CIELab System. Statistic processing of the results was carried out by using variation analysis. Significance of the differences was examined according to Tukey's test. Under the influence of ultrasonic treatment an improvement in colour quality of the fresh and cooked tubers was observed. The genetic traits of tested cultivars significantly affected the colour of fresh and cooked potato tubers.
Paper presents the study on the content of particular polysaccharide fractions in potatoes of ten different cultivars and on the influence of these components on the texture of cooked potatoes as well as on French fries and chips. Raw material used in experiment, included tuber samples of 10 cultivars: 7 of Polish and 3 of foreign origin (German and Dutch-German). From among all studied cultivars 6 were chosen for cooked potato processing (Aster, Orlik, Irga, Mila, Bryza, Arkadia), 6 for French fries preparation (Aster, Mila, Arkadia, Bryza, Ania, Saturna) and 5 for chips processing (Aster, Karlena, Ania, Saturna, Panda). The contents of dry matter, starch, total pectine, cellulose, hemicellulose and lignin, were determined in potato tubers. The consistence of products was measured’ using the Stevens QTS-25 apparatus with „Shear blade” attachment. Maximum force [N] to cut the French fries, chips and cooked potato (products in form of strips, 1 x 1 cm cross-section) was measured. Significant linear dependence was stated between the contents of nonstarch polysaccharides and starch and the consistence of tested potato products. The hardness of cooked tubers depended on lignin, pectin and hemicellulose contents in potatoes. French fries hardness was affected by starch, hemicellulose and pectine contents, while that of the chips by starch and pectine contents in raw material.
Studies were carried out in 2003-2005 on the soil in South-Eastern Poland. The experiment was made by randomised blocks in there replications. The factor of the experiment was the cultivars of sweet potato: Carmen Rubin, Goldstar and White Triumph. Full manuring and uniform mineral fertilization were applied in identical amounts: 100 kg N, 43.6 kg P, 124.5 kg K and 25 t·ha⁻¹ FYM. The reproduction material comprised seedlings produced due to in vitro micropropagation. Samples for qualitative examinations (20 potato tubers of mean size) from three field replications for each plot were collected by standard methods. The differences in darkening of raw and coked sweet potato tubers was conditioned by the phenotypical variability.
