A glycoprotein purified from the internal nuclear matrix of chicken liver nuclei has been identified, by partial sequencing and by Western blotting, as hsp108, which is a component of the hsp90 superfamily. This protein has been previously characterized as a protein which copurifies with the cytoplasmic progesterone receptor and as a transferrin-binding protein of the chicken oviduct cell membrane. We have found that hsp108 is present in the nuclear matrix even in the absence of a heat shock or of other noxious conditions. Some of the properties already described for its homologous proteins (endoplasmin, grp94, hsp100) might explain its function at the nuclear matrix level. Hsp108 isolated from the liver nuclear matrix has a carbohydrate composition significantly different from that of the protein of the oviduct cell membrane.
Starch liquefaction without significant increase in dextrose value was attempted. Potato, corn and pea high amylose starches were digested with thermostable alpha-amylase. Different reaction conditions (starch concentration, enzyme dosage, time reaction) were used in hydrolyses into DE < 10. Chemical and physical properties of obtained hydrolysates such as carbohydrate composition, iodine absorbance value, turbidity measurement, viscosity, gelling ability, swelling power were recognised. Comparison of properties of hydrolysates of similar DE indicated that the potato hydrolysates distinguish in the highest solubility and the lowest iodine absorbance. The high-amylose corn hydrolysates were characterised with the following properties: the highest swelling power,and gelling ability. Pea hydrolysates had the highest viscosity.
Average consumption and individual intakes of carbohydrate sources and carbohydrates was examined. Declining importance of total carbohydrates as an energy source over a long-term post-war period was documented together with the shifts towards saccharose at the expense of starch. This shift stopped in the last few years due to a reduction in consumer demand for more expensive food groups substituted for basic staples. The impact of the socioeconomic factors on the level and composition of carbohydrate consumption was presented. Regional differences with respect to importance of carbohydrates in the diets were shown also. The effect of the sex and age on individual carbohydrate intake was analysed as well.
