A reflectance method has been adopted for the determination of the initial colour and the browning rate of white peach pulps. The analyses of the reflectance spectra were carried out on 10 cultivars or hybrids. We show two groups of pulps relating to the presence of anthocyanins in the cultivars and three different behaviours of incubated pulps: regular browning with increasing absorbance in the low wavelengths region, some browning pattern with a valley at 520 nm, which phenomenon could explain the coupled oxidation of anthocyanins and other polyphenols, no browning of pulps. Interdependent reactions such as the coupled oxidation of anthocyanins and changes in the microstructure of the pulps have been found. Tristimulus values for CIE1976 L* a*b* colour space were completely rejected because they cannot fully describe this complex browning process of white peach pulps.
