The production of juices and drinks in Poland has the highest dynamics of development in relation to all sectors of food processing. In 80 's the production of juices and drinks amounted 50 000 t, in 1992 -100 000 t, in 1995 - more than 330 000 t and in 1998 - 700 000 t. In 90s consumption of juices and drinks increased from 2,5 kg per person in 1992 to 17 kg in 1998. The participation of juices and drinks made of fruits in consumption in 1998 is 82% of all drinks. The economic situation of producers of juices and drinks in 1998 was better than of the rest of fruit-vegetable preserves sector. The market of these products is starting to be replete. Global consumption till 2003 will increase about 5-6% per year to 201 per person in the year. Quality, assortment, economic activity will decide about being of producers on the market. The big, economically strong and having good market policy firms will have the highest chances to stay on the market.
Technology should make possible production of safe product, with retain of raw material nutritive value and with good sensory quality. Producer should take the technological possibilities and costs under the account. Quality of juices or nectars depends in a large degree on the method of their preparation, whether is it clear, naturally turbid or pulpy. The less solid parts content, more parts of fruits and of vegetables became removed in processing, and the composition of juice differs more from the raw material. In the last years there is a great attention on the fruits and vegetables as the sources of biologically active compounds, e.g. with an antioxidant activity. The creation of desirable sensory qualities may be the reason of an unintentional lowering of juice nutritional values. During the juice clarification the fibre is removed. In an effort to decrease the haze-forming tendency of packaged juices, processes are employed to minimise or eliminate polyphenols. Polyphenols, ascorbic acid and carotenoides are the main compounds responsible for antioxidant activity' of fruits and vegetables. Changes of technology can be the reason of an introduction of new health risk, for example E. coli 0157: H7 infections after consumption of not pasteurised apple juices. The short-term storage of the juice may enhance the lethality of these microorganisms. Influence of technological process on nutritive value was presented as examples of juice antioxidant capacity changes during processing. It is connected with loss of naturally occurring antioxidants, as well with formation of novel antioxidant compounds. Modifications of each process can have different, both positive and negative effect on quality of juice. It was presented on example of extraction processes and of clarifying.
In the third day of Symposium the posters session, leaded by Prof. A. Jarczyk, had the place. There were showed 36 posters, which were presenting the following research themes: The technologies of fruit and vegetables juices and drinks, The methods of definitions of juices and drinks quality, The characterisation of composition of raw materials and juices, Others - market policy, computer technique and programs etc. The ensemble estimating the posters admitted subject matter of researches as interesting and serving the needs of industry. The level of the works was estimates as good, close to the world level. But there are the factors limiting the scope of researches, especially relating to naturality and identity of juices. These factors are a high cost of modern research equipment and enzymatic preparates. 11 posters were especially prized for research matter, performing and way of presentation.
Compared were systems used for the control of quality of juices and soft drinks in Poland and other countries. The differences were shown between producer's declaration and the results of a control conducted by a third party. Consumer has also paid attention to quality judgement and that made by specialised consumer organisations in different countries. The role and aims of FDA (Food and Drug Administration) in the USA has been discussed referring to the evaluation and authorisation of fruit juice plants and especially to the control of quality of imported fruit and vegetable concentrates and frozen raw products. A very important task for the fruit and vegetable processing plants in Poland and different countries has been obtaining certificates stating that particular products fulfil the requirements of national standards ( e. g. requirement of French certificate NF, certificate PN, certificate Q and other). Directives of the EU have been mentioned in reference to production hygiene, and other subjects mentioned in the directive No 77. Particular attention has been given to a Council Directive No 93/77/EEC dated 21 September 1993, concerning production of juices, nectars and relative products. Quality control system in Japan has also been discussed. The systems of certification introduced in Poland and different countries based on ISO-9000 and ISO-14000 standards have also been discussed. Introduction of integrated systems based on the above standards and on Pr. PN EN - 18000 referring to safety has an important effect on organisational and technical system of the processing plants and building confidence of consumers for the quality of produced juices and soft drinks. Certificate of quality assurance system with state emblem granted to a particular plant producing juices is the base for company promotion both on internal and international markets. Summary of information has been given on the development of certification systems in the world.
