Trends in production of fruit juices are discussed considering their nutritional value and on this background partial results of EU project "Isafruit" are presented. Within this project among others carried out are investigations on the suitability of scab resistant apple cultivars for production of clear and cloudy juices. It was shown that cloudy juices may contain over twice as much of polyphenols than the clear juices. Out of scab resistant cultivars (e.g. 'Melfree' high quality cloudy juices may be produced, which when sold in glass bottles would be especially attractive for consumers. From cultivars characterizing with low polyphenoloxidase activity (e.g. 'Shampion') light coloured juices were obtained.
