Introduction of European food law in Poland has caused changes in the governmental activities aimed at ensuring the appropriate quality of food products including fishery products. Food hygiene and food safety have gained in importance. However abolition of the obligatory Polish Standards has significantly reduced the number of obligatory parameters that applied to fish and fishery products. The abundance of regulations requires new detailed analyses.
