Wheat starch was hydrolysed by means of liquefying and saccharyfying enzymes to get suitable substrates for submerged citric acid fermentation. A suitable Aspergillus niger strain was used. Improved yields could be obtained by growing the fungus on a starch containing agar and using the spores produced as fermentation inoculum. The toxic effect of trace metals could be reduced by the addition of different amounts of potassium hexacyanoferrate (II).
