In the beginning of 2011 the changes in hop resins in hop pellets (packed in foils under the vacuum) from 5 Polish and 6 foreign varieties from years 2007-2009 were determined with the use of Wõllmer-analyse after 1,5-, 2,5- and 3,5-year storage in two different ranges of temperatures: 3-5°C and 15-18°C. In 2008 and 2009 the degree of ageing of hop pellets depended on the temperature of storage, the year of crop, hop varieties and amounted to from 11,1% to 28,7%. The fall of the content of alpha-acids during storage in 15-18°C compared with the content of alpha-acids during storage in 3-5°C amounted to from 3,3% to 14%. The degree of ageing of hop pellets from year 2007 was the highest (up to 31,4%) and the fall of alpha-acids in pellets drop up 13,3% during storage in 15-18°C compared with the content of alpha-acids in pellets during storage in 3-5°C.
