The paper is dedicated to researches of influence of thermal treatment to quality of rolls’ core. It has been established that high temperature of heating promote to changes in metal base of such material. It has been showed that such structural changes do not reduce properties’ level of core of rolls.

Preliminary study of memory processes in Mongolian gerbil (Meriones unguiculatus). Mongolian gerbil (Meriones unguiculatus) a small rodent living in the wild steppes of Mongolia was discovered in 1866 and it is becoming increasingly popular as a pet. The present work is an introduction to describe the behavior of this species and to investigate the influence of gender and age on memory process. 40 gerbils divided into four study groups (young males, young females, adult males, adult females) were twice tested in a modified version of the Lashley III maze (repeat after a week). Using statistical tests memory parameters, the activity of animals and behavior associated with the level of stress were analyzed. Conducted observations and calculations performed showed no difference between the groups (p > 0.05), which leads to the conclusion that in Mongolian gerbils age and sex have no effect on memory.

A current problem of the population nowadays appears to be the lack of motor activity, the increase in BMI and the growth in stressogenic factors in the way of life of the population. This in turn affects the quality of human life and health. On a sample of university undergraduates (794 men and 1,169 women) we were observing the relation between overweight, namely the level of BMI gained via somatometric measurement, and the amount of subjectively evaluated level of motor activity, in their relation to the subjectively perceived extent of stress in their lifestyle, using the method of questionnaire. The results in both genders confirmed the existing relationship between BMI values and the degree of physical activity as well as the correlation between motor activity and subjectively perceived stress. As a result, the relationship between the variables motor activity and stress level did not prove significant.

Stress analysis as a determinant of salami rennet cheese ripening

Changes of mechanical properties of the Salami rennet cheese were monitored during 12 weeks of the ripening process. The dynamic method of direct measurement of sinusoidal changes of stress and deformation and computer analysis of the thermodynamic state of the material under study were applied. The analysis of changes of stress level during the ripening process and a comparison with the analytical method, showed usefulness of the method applied. The speed of the method applied makes it possible to get instant qualification of stages of Salami cheese ripening process. The analysis of stress values in the cheeses section under study was proved to be a useful method for determining the ripening rate.
