The definition and history of prognostic microbiology is presented in this paper. Its usefulness in the assistance the HACCP system is presented. The computer prognostic programs FoodMicro Model and Pathogen Modeling Program and their mathematics models, analysed parameters and analysed pathogen bacteria are discussed. The possibilities of these models use in technological processes and quality management are discussed. The Neural Network system and its wide use, also in the programming of beer fermentation process, are discussed.
