Present investigations were carried out on apple's nectars and naturally turbid juices, which have been recently introduced to the Polish market. The objective of the study was to compare the content of phenolic compounds and their antioxidant activity between turbid nectar „Antonówka" produced by the Firm Tymbark and clear juice „Tymbark Apple juice 100%" as well as turbid apple juice created by different company Valuable phenolic compounds with their high antioxidant activty in turbid apple juice „Antonówka" are saved by correctly conducted technological processes of production. Due to inappropriate technology performed in case of turbid juice possessed from different company 2.5 time smaller content of valuable polyphenols was measuredwhat effected in changed colour of the juice and antioxidant activity

In recent years the trends naturalness, premium and the use of healthy and functional ingredients are assuming ever greater importance in food production. Epidemiological studies have indicated that fruits, vegetables and their products as juices and nectars consumption is associated with reduced risk of chronic diseases. Applejuices and nectars are known as a rich source of nutrient, contain high levels of polyphenols and other phytochemicals. In order to enrich bioactive compounds in apple products it is recommend to production of pulp-enriched cloudy apple juices by blending of apple puree with natural cloudy juice. They can to be a natural source of valuable, healthy and antioxidant ingredients and fibers and therefore deliver an especially natural functionality.
