Saccharomyces cerevisiae yeast Johannisberg and Syrena races showed the ability to growth populations and must fermentation at temperature range 6-30°C. On this basis both of strains have been classified to cryotolerant wine yeast. On the other hand, Johannisberg and Syrena strains showed the differences in optimal temperatures to growth and fermentation activity. For Johannisberg strain obtained the best yield of main fermentation products at range 10-16°C, and for Syrena strain this optimal temperatures removed at 24-30°C. By-products of fermentation (glycerol, organic acids, other volatile substances) depended on fermentation temperatures and the specific abilities of each strain. The both strains showed good biotechnological activity in the time of apple must fermentation.
