The content of polyphenolic compounds and the colour of apple must obtained from the apple pulp being storea before pressing was studied. Changes in the polyphenolic compounds were intensive in the first minutes after apple comminution. Especially susceptible to the reaction were procyanidins and flavanols. The changes in polyphenolic compounds were accompanied by the must browning process being more intensive in case of turbid than clear must.
