Celem pracy było określenie przydatności zastosowania zawartości steroli w zielonym oraz palonym ziarnie kawowym do rozróżniania kaw dwóch gatunków o różnym pochodzeniu geograficznym. Obiektem badań było pięć kaw arabskich pochodzących z Gwatemali, Etiopii, Brazylii, Kolumbii i Kostaryki oraz jedna robusta pochodząca z Indii. Skład steroli zbadano metodą chromatografii gazowej i spektrometrii mas. Zidentyfikowano i oznaczono ilościowo 3 sterole (kampesterol, stigmasterol, β-sitosterol) Różnice ilościowe w składzie steroli zilustrowano za pomocą analizy składowych głównych (PCA).

The aim of this study was to assess the usefulness of sterol fraction analysis in raw and roosted beans for identification of the geographical origin of two cafe species. Experimental material was composed of five Arabica cafes from Guatemala, Ethiopia, Brazil, Columbia, and Costa Rica and one Robusta café sample from India. Sterol composition was determined with purpose of gas chromatography and mass spectrometry. Three different compounds (campesterol, stigmasterol and β-sitosterol) were identified and quantified in the studied samples. Differences in the sterol composition were assessed with purpose of principal component analysis (PCA) statistical method.
