The purpose of the study was to determine the level and variability of bacterial contamination, the content of salt, nitrates and nitrites in sausages originating from illegal production compared with analogous products produced by meat-factories being under sanitary supervision of an authorized veterinary service. It was found that sausages coming from illegal production possesed a significantly higher content of bacterial contaminations compared to those being under veterinary supervision. The number of bacterial cells in the illegal products was over 104 per 1 gram directly after production. The level of nitrates and nitrites in sausages coming from factories under the veterinary supervision did not exceed the acceptable quota, i.e. 0.125 per 1 kg of the product, while the concentrations in illegal products were much higher, i.e. from 0.353 to 5.090 g per I kg.
