The last 15-20 year has been a period in which considerable interest has developed in the use of supercritical fluid (SCF). Supercritical fluids, are receiving attention as a medium for extraction processes as well for enzymatic reaction or chromatographic processes, because of advantages such as high diffusivity and low viscosity. Carbon dioxide is particularly attractive because it is nontoxic, a potential advantage for processes yielding food or pharmaceuticals. Functional application like decaffeination, aroma and oil recovery, fish oil separation, enzymatic catalysis and others have been reviewed. Developments using supercritical CO₂ in analytical and preparative chromatography have been described.
