The levels of organochlorine pesticides, polychlorinated biphenyls (PCB), toxic elements (Pb, Cd, Hg and As) and volatile N-nitrosoamines (NDMA, NDEA, NDPA, NPIP, NPYR, NMOR) were measured in 168 samples of pasteurized and cured pork ham. The concentrations of these compounds found were relatively low. The mean levels of S-DDT and PCB in ham fat were 115 and 15 pg/kg, respectively. The mean concentrations of toxic elements were: for lead - 15 pg/kg; cadmium - 0.5 pg/kg; mercury - 4 pg/kg and arsenic - 7 pg/kg. Nitrosoamines were detected quite frequently (e.g. NDMA in more than 60% of ham samples) at a level from 0.1 to 7.5 pg/kg.
