Possibility of production of extruderants with potato flavour, based on maize semolina, was investigated /Is a single-screw extruder way be used for the purpose, the production may be undertaken in very small mills. Optimum parameters for the process were determined: moisture content in the starting material -14%, die diameter - 5 mm, cylinder temperature - 110/140/165°C. However, the admixture of potato grit must not exceed 20%. Greater admixtures will result in considerable brewing of the product and lowering the extruderant quality.
