The purpose of the present studies was to determine the role of carboxyl groups, ε-NH₂ -lysine groups, SH-cysteine groups and tyrosyl and arginine residues in the formation of heat-induced casein – β-lactoglobulin complex. These results confirm the view that β-lactoglobulin forms a heat induced complex with χ-casein not containing carbohydrates. It seems that an important role in heat induced interaction between χ-casein and β-lactoglobulin is played by tyrosyl and arginine residues.
The paper difines the effect of casein carboxyl groups exterification on the following parameters of casein: thermal stability, stability against calcium and ethanol, hydration level, interaction with β-lactoglobulin, thermal stability of the resultant protein complex, electrophoretic properties, and the UV absorption spectrum. The results make it possible to suppose that organization of a casein micelle depends on hydrophobic interactions between casein fractions. The interactions result in formation of sub-units inside the micelle.
The paper presents a review of literature databases, paying special attention to the use of advanced statistical method as a tool for data analysis in food and nutrition science. Two bibliographic databases, i.e. CAB and FSTA, were searched thoroughly in the study. A dynamic increase in the number of publications based on artificial intelligence studies was observed. A large body of investigations is devoted to the problems of food quality assurance and food authenticity control.
The objective of this work was to determine the effect of cold storage of milk on selected functional properties of micellar casein. The cold storage of milk was found to modify the molecular state of casein, changing its functional properties. The time of enzymatic coagulation was lengthened and the amount of chymosin-released peptides increased. The modification of molecular state caused the formation of milk gels of a changed structure. The changes induced by low temperature did not reverse on balancing the protein system of milk by stabilization (22724 h) or termization (65°C/15 s).
Rennin proteolysis of milk proteins was investigated in milk fortified with alcohol-precipitated whey proteins concentrate. A mechanism of interactions between alcohol-denatured whey proteins and micellar casein is proposed on the basis of results of starch-gel electrophoresis, the amounts of released peptides and glycopeptides, and the determined alcohol and beat stability.
W pracy przedstawiono i zanalizowano wyniki badań dotyczących zależności między strukturą białek mleka a ich wybranymi właściwościami funkcjonalnymi. Ważnymi czynnikami wpływającymi na właściwości funkcjonalne białek są wymiary molekularne, hydrofobowość, ładunek i elastyczność. Na właściwości funkcjonalne mają wpływ także takie czynniki zewnętrzne, jak: temperatura, pH, siła jonowa czy obecność innych cząsteczek. Podstawową przyczynę różnic we właściwościach funkcjonalnych między białkami upatruje się w ich odmiennej strukturze. Właściwości funkcjonalne można modyfikować metodami fizycznymi, chemicznymi, enzymatycznymi i genetycznymi. Rozpuszczalność jest właściwością fizykochemiczną, od której mogą zależeć inne właściwości funkcjonalne. Białka mogą adsorbować na granicy faz olej/woda i powietrze/woda i obniżać napięcie powierzchniowe, zmieniając jednocześnie swoją strukturę. Dobre właściwości powierzchniowe białek łączy się ze specyficzną dystrybucją ich reszt hydrofobowych i hydrofilowych w ściśle odizolowane obszary, połączoną z zapewnieniem minimalnej masy cząsteczkowej. Stwierdzono istnienie związku między udziałem struktury α-helikalnej, indukowanej adsorpcją na hydrofobowej powierzchni, a kształtowaniem się zdolności do tworzenia emulsji przez peptydy. W opisywaniu zależności między strukturą a funkcją białek coraz większą rolę zaczynają odgrywać wielowymiarowe metody statystyczne. Znajomość molekularnych podstaw kształtowania się rozpuszczalności, zdolności do tworzenia/stabilizowania emulsji/piany przez białka jest podstawową wiedzą w badaniach nad zastosowaniami białek mleka w żywności o pożądanych i zaprojektowanych cechach.
