The human diet should be a rich source of nutrients, energy and tissue-building materials. Bovine milk is one of the few food products of animal origin that meet the above requirements. It contains proteins rich in readily available amino acids, fatty acids, vitamins, micronutrients and macronutrients, such as calcium, magnesium, phosphorus, sodium, iodine, potassium, chlorine and small quantities of iron. This study discusses the positive effects of bovine milk on human health, resulting from its composition and high nutritive value. We have reviewed numerous publications and reports indicating that milk contains readily available amino acids, unsaturated fatty acids which are vital components of the human diet, as well as macronutrients and micronutrients that regulate biochemical processes in the body. Particular attention has been paid to the anti-carcinogenic, antioxidant, anti-sclerotic, anti-inflammatory and antibacterial properties of milk, which is also known to lower blood pressure and strengthen the immune system. The health benefits delivered by selected minerals contained in milk are also described. Calcium content largely determines the nutritional value and heat stability of milk, as well as its suitability for cheese production. Milk calcium is easily absorbed, and it is characterized by a high level of physiological activity due to a favorable calcium to phosphorus ratio of 1.2:1. Milk contains 0.75 g-1.10 g dm–3 of phosphorus, and phosphorus concentrations are generally stable and independent of the nutritional regime of cows. The magnesium content of milk is determined in the range of 100 to 150 mg dm–3. In milk, magnesium is found in the form of soluble compounds (75% of total Mg) as well as colloidal compounds (phosphates, citrates). Magnesium concentrations are correlated with the calcium content of milk. The magnesium to calcium ratio determine milk’s heat stability. Milk contains 1.35 to 1.55 g dm–3 of fully ionized potassium. The sodium content of milk is determined at 350-600 mg dm–3, and chlorine levels are noted in the range of 0.80-1.40 g dm–3. Sodium chloride stabilizes the osmotic pressure of milk (including lactose). Milk contains trace quantities of iron (0.42 to 0.45 mg kg–1).
Food products are an exclusive source of nutrients necessary for the development and proper functioning of human organism. The key issue in nutrition is the bioavailability of nutrients rather than the supply of their adequate amounts in a diet. Calcium is the basic structural element of bones and teeth. It is also an element with a wide range of physiological functions, e.g. it is responsible for the right excitability of muscular and nervous system, normal heart function, hormonal secretion, blood clotting, cell membrane permeability and activation of various enzymes. It is universally acknowledged that the main source of calcium for a human organism is milk and dairy products, owing to their rich content and high availability of calcium. However, certain stages in food processing technologies may depress the high bioavailability of dietary nutrients. In this paper, long-term research findings about the bioavailability of calcium in milk products have been summarized, in addition to the information about calcium uptake from bread or other popular breakfast meals composed of milk products in combination with cereal component. The popular opinion that milk and other dairy products are the best and most valuable source of highly available calcium has indeed been supported. However, an in vitro study demonstrates that an addition of cereal to milk or yoghurt significantly diminishes the quantity of calcium released during digestion, which could contribute to the development of calcium insufficiency or augmentation of its symptoms.
Celem pracy było określenie udziału kwasów tłuszczowych w mleku krów rasy polskiej holsztyńskofryzyjskiej, uwzględniając wpływ kolejności laktacji i fazy laktacji. Do badań wybrano 48 krów rasy polskiej holsztyńsko-fryzyjskiej, będących w różnym wieku: I, II, III i IV laktacja (po 12 szt. w każdej z nich). Od każdej krowy pobierano próby mleka z uwzględnieniem fazy laktacji, tj. w następujących dniach doju: 6., 30., 90., 300., 350. i 400. (łącznie 288 prób). Spośród oznaczonych kwasów tłuszczowych mleka najwyższy udział stanowiły: C16:0, C18:1 cis 9, C18:0 oraz C14:0, w tym kwasy oleinowy (C18:1 cis 9) i stearynowy (C18:0), którym przypisuje się właściwości obniżające poziom cholesterolu we krwi, stanowiły aż 37,35 g/100 g tłuszczu. Największą zawartością nasyconych kwasów tłuszczowych (SFA) charakteryzowało się mleko krów z IV laktacji (p ≤ 0,05) oraz w okresie okołoporodowym, tj. w 6. dniu laktacji. Zawartość korzystnych nienasyconych kwasów tłuszczowych (UFA) malała w tłuszczu mleka w kolejnych czterech laktacjach (p ≤ 0,05), także w miarę upływu laktacji, osiągając najwyższą wartość w 6. dniu, a najniższą w 400. dniu (p ≤ 0,01 i p ≤ 0,05). Mleko pochodzące od pierwiastek charakteryzowało się najwyższą koncentracją kwasów tłuszczowych wielonienasyconych (PUFA) i jednonienasyconych (MUFA), a jednocześnie najmniejszą zawartością kwasów mniej korzystnie wpływających na zdrowie człowieka, tj. C12:0, C14:0, C16:0. W miarę trwania laktacji zawartość MUFA w tłuszczu mleka malała, a PUFA wzrastała, co potwierdzają różnice statystyczne przy p ≤ 0,01 i p ≤ 0,05. W okresie od 6. do 90. dnia laktacji najkorzystniejszy był stosunek kwasów n-6/n-3 oraz największa zawartość funkcjonalnych kwasów tłuszczowych, tj.: masłowego (BA), cis 9 oleinowego (OA), linolowego (LA) oraz krótkołańcuchowych (SCFA) i długołańcuchowych kwasów tłuszczowych (LCFA). Zawartość kwasów: cis 9 trans 11 sprzężonego linolowego (CLA) i trans 10+11 wakcenowego (TVA) była najmniejsza w tzw. szczycie wydajności laktacyjnej i wzrastała w miarę trwania laktacji, osiągając najwyższe wartości w 300. dniu laktacji.
Clinical studies were carried out in the period of 2003-2008 at the Provincial Children’s Rehabilitation Hospital in Ameryka near Olsztyn (Poland). The study involved a group of children and youths exhibiting spinal deformity progression in idiopathic scoliosis (IS) of more than 5o per year according to the Cobb scale. Four hundred and fifty patients between 4 and 15 years of age were divided into three groups (n = 150). Group I received 2-hour and group II 9-hour treatment of Lateral Electrical Surface Stimulation (LESS), respectively, whereas group III (control) was treated only with corrective exercises for 30 minutes twice a day. LESS was performed as 24-month treatment with the use of a battery-operated SCOL-2 stimulator manufactured by Elmech, Warsaw, Poland. The effectiveness of this method was confirmed in the treatment of spinal IS in children and adolescent patients, especially when the initial spinal deformity does not exceed 20o according to the Cobb scale. A short-duration electrostimulation – 2 hours daily – was found to produce results similar to those obtained after overnight, 9-hour electrostimulation. Moreover, the analysis of the Harrington prognostic index F confirms the positive effect of LESS in both groups of patients (2 h and 9 h of LESS).
The aim of our study was to investigate the amount of 110 pesticide residues in cereals and foodstuff from Poland as a part of official control. A total of 89 samples were collected in 2009-10. In 84.2% of the samples no residues were found: 15.8% of samples contained pesticide residues below the maximum residue limit. Pirimiphos-methyl was the most frequently found pesticide. The results show that occurrence of pesticide residues in cereals and feeding stuff could not be considered serious threats to human and animal health. Nevertheless, an investigation into continuous monitoring and tighter regulation of pesticide residues in food and feed is recommended.

Health-supporting properties of beef

Contemporary human diet contains excessive quantities of n-6 saturated fatty acids (SFA) and polyunsaturated fatty acids (PUFA), but it is deficient in n-3 fatty acids. This imbalance could be the cause of respiratory diseases, obesity and cancer. until recently, animal fat, including meat fat, was regarded solely as a source of saturated fatty acids, which are a risk factor for atherosclerosis, obesity and certain types of cancer. Recent studies have shown, however, that animal fats contain biologically active substances beneficial for health, and that only some saturated fatty acids have adverse consequences. The latter group includes lauric acid (C12), myristic acid (C14) and palmitic acid (C16), i.e. mainly the ones with an unfavorable n-6/n-3 fatty acid ratio. Apart from fat, beef also contains high amounts of minerals, mainly phosphorus, potassium, magnesium and zinc. Conjugated linoleic acid (CLA), in particular its cis-9 trans-11 and trans-9 cis-11 isomers, is one of the substances with health-supporting properties. Synthesized solely in the gastrointestinal tract of ruminants, CLA reaches the blood stream and is used by the mammary gland to synthesize milk fat. CLA is embedded in the animal's adipose tissue. There is a large body of research confirming CLA's ability to reduce the risk of atherosclerosis and obesity, and to lower cholesterol levels. when incorporated into the human diet in the amount of 1.5 to 3.5 g, CLA exerts anticarcinogenic effects (it inhibits the development ofbreast cancer, malignant melanoma, colorectal cancer and lung cancer). CLA prevents and alleviates the symptoms of type 2 diabetes; it is a powerful antioxidant and it boosts immunity. The highest quantities of CLA have been noted in the meat of ruminants. The CLA content of ruminant meat has been determined in the range of 10 to 33 mg 100 g- 1 of fat, being much higher than in pork (2-19 mg) and poultry (3.4 mg). Beef also has the most desirable n-6/n-3 fatty acid ratio at 6.3:1 in comparison with pork (12.7:1) and poultry (8.3:1). The highest levels of n-3 fatty acids can also be found in beef (5-6 g in 100 g fat). The objective of this study was to present and discuss the most recent findings concerning the fatty acid content of beef and its implications for human health. Source data were gathered and grouped thematically, and an attempt was made to characterize beef and its fatty acid profile.
Idiopathic scoliosis (IS), despite multidirectional therapy, involves a significant impairment of the quality of life of the patients. It is caused by pain syndromes frequently accompanying IS, the etiology of which has not been entirely discovered. The present research on environmental factors predisposing to pain syndromes in girls with IS involved analysis of 54 girls under ambulatory care, aged 14-17 (on average 15.3-years-old ±0.99). The patients’ natural environment was analysed, including time spent in a sedentary position during the day, sleeping time, time spent on physical activity during the week, regularity of meals consumed, as well as the quantitative composition of the diet. The research also concerned the location and characteristics of ailment reported, as well as pain intensity on the Numerical Rating Scale (NRS). It was found that the most frequent locations of back pain were: lumbar section – in 28 persons (51.9% of the examined population), and thoracic section of the spine – in 21 persons (38.9% of the examined population). Pain occurring at the same time in the cervical, thoracic and lumbar sections of the spine was reported for 4 persons (7.4% of the examined population). Fifty girls (92.6%) were aware of controlling their body posture, and 23 persons (42.6%) were able to correct it. The group of girls under examination suffering from pain in the lumbar section of the spine was characterized by a longer period of retaining a sedentary position, less time dedicated to any therapeutic rehabilitation programme, higher intensity of pain, and a higher average age than the group with pain in the thoracic section of the spine. The research proved that patients with pain syndrome located in the lumbar part of the spine were characterized by more time spent in a sedentary position, less time spent on a therapeutic rehabilitation programme, higher intensity of pain and a higher average age than the group suffering from pain in the thoracic section of the spine. The lifestyles of the patients under examination and their lack of awareness of the need to control the body posture can affect the type and intensity of pain.
The increasing resistance of community and hospital acquired bacterial strains has become a challenge to the current health policy in Poland. Although some bacteria are known to have a peculiar resistance towards a given agent, antibiotics have a well-established position in clinical practice and are broadly available in our lives. The universal access to antimicrobial therapy and its overuse have created an issue of previously susceptible bacteria now presenting antibiotic resistance. All bacteria that survive antibiotic treatment, continue growth and reproduction. This phenomenon is also observed in livestock rearing. An inadequate implementation of antibiotic therapy leads to the transfer of resistant bacterial strains into the environment of people, who eat products of animal and plant origin. Moreover, the non-compliance to law in terms of antibiotics added to animal fodder or negilgence of withdrawal periods seems to further exacerbate the situation. Various research projects conducted in Poland and elsewhere have demonstrated that antibiotics produce an immunosuppressive effect, which exposes both humans and animals to different infections. Antibiotics also interfere with the growth of many microorganisms, recognized as part of the human and animal physiological microflora, as a result of which dysbacteriosis may develop. In order to limit the use of antibiotics in animal husbandry, research should be focus on finding alternative agents based on plant extracts that undergo biodegradation.
