The quality evaluation of carrass of the hybrid fattening pigs of Large White and Landrace Breed was made in relation to the methods of maintenance, feeding and the time of transport. Eighty fattening pigs /40 heads from each round-up/ were examined. One group ot forty pigs brought to the slaughter house came from time Industrial Farm situated about 30 km from the Meat Plant in Wroclaw, the other group of pigs was bred traditionally and came from the round-up in Pogorzela /100 km from the Meat Plant In Wroclaw/. After the slaughtering the following features were evaluated: the output of warm and cold carcass dressing, carcass growth and development pH₄₅ and pH₂₄, of the gluteus muscle meat, water binding capacity, brightness, content of Ca, Mg, Na, K, Zn, Pb, Cd and Cu in the gluteus muscle meat. Higher cold slaughtering output and higher warm slaughtering output /73.88 and 72.13%/ were characteristic of the fattening pigs bred traditionally as compared to those from the industrial farm /72.44 and 69.66%/. The pigs bred traditionally were bigger than those bred on the farm. The differences between the means of these traits were statistically significant and highly significant. Better musculature was characteristic of pigs from the industrial farm. Their carcass showeed technological usability, as far as pH₄₅ and pH₂₄, photometrical brightness and the content of Ca, Mg and Na were concerned. It was observed that transport affected the relationships between Ca and Mg as well as Na and K in the carcass of the fattening pigs coming from the round-up situated at the distance of 100 km from the Meat Plant in Wroclaw.
