Określono wpływ suszenia sublimacyjnego i konwekcyjnego oraz temperatur tych procesów na zdolność przeciwutleniającą i zawartość polifenoli w tkance jabłka. Stosowane temperatury półek ogrzewających materiał podczas suszenia sublimacyjnego to 20, 30 i 40°C, a powietrza suszącego - 60, 70 i 80°C. Najwyższą zdolnością zmiatania wolnych rodników i zawartością polifenoli charakteryzował się susz sublimacyjny. Nie wykazano istotnych różnic pomiędzy zdolnością przeciwutleniającą liofilizatów i jabłka świeżego. Wysoka temperatura suszenia konwekcyjnego oraz długi czas trwania procesu spowodowały znaczące zmniejszenie zawartości związków polifenolowych (o 25-40%) i zdolności przeciwutleniającej (o 18-67%). Najwyższą degradację polifenoli i zdolności przeciwutleniającej spowodowało suszenie konwekcyjne w temperaturze 60°C.

The aim of the work was reveeling the influence of freeze and convective drying, as well as temperatures of these processes, on radical scavenging activity and polyphenol content in apple tissue. The applied temperatures of shelves heating the material during freeze drying was: 20, 30 and 40°C, and air drying 60, 70 and 80°C. The highest radical scavenging activity and the highest polyphenol content was characteristic for freeze dried material. There were not any essential differences between radical scavenging activity of freeze dried and fresh apple. High temperature of convective drying, as well as long time of the process, caused a significant decrease of polyphenol content (25-40%) and radical scavenging activity (18-67%). The highest degradation of polyphenols and antioxidant activity were caused by convective drying at the temperature of 60°C.
