The main goal of this article was evaluation of the economic risk exemplified on meat and poultry enlerprises in the Wielkopolska Region. Ali used data were collected from 6 meat enterprises from 1999-2002 and 3 poultry entreprises from 1999-2002. In order to identificate different methods of the economic risk protection, primary data were usedfrom a survey (direct interview). The evaluation of the economic risk was measured from financial balance sheet, profit and loss accounts as well as cashfow units, which are presented in the Annual Statistics Yearbooks (Monitor Polski B). The results vary both sectors.
